      2Big, I've only freezed eggplant after I've cooked it (like with ratatouille or with moussaka). It does okay.

      Baby, make sure the eggplant is really cooked. Eggplant should be soft. The best way to cook it during the summer is to take a whole eggplant, rub it with a little oil and toss it on the grill. Let it grill until it is soft and charred all over. Cut the eggplant in half and scoop out the flesh. You can mash it alittle and add some freshly minced garlic, olive oil and chopped tomato (alittle chopped basil won't hurt this either!)----the appearance is a dullish gray, but it is so good because it gets a slightly smoky taste from the grilling and it's all silky and smooth when you eat it and the freshness of the garlic and herbs.....(Excuse me while I wipe the drool off my keyboard!)

      There's something about that eggplant-tomato combo...It could be that the eggplant when cooked properly has a rich, silky, smooth texture and the tomatoes add just the right amount of sweetness...I have a similar problem (though not as extreme) with homemade Hollandaise sauce, so I guess it is the texture because properly made Hollandaise has a rich, silky, smooth texture too.

        My dangerous LC recipe is, heavy cream whipped up with splenda, cocoa and a little bit of vanilla extract...tastes like chocolate moose(sp? LOL i know).

        I often thought of adding different extracts,like mint or coconut or rum, but just never
        have.

        And I make that cheese cake with beaten egg whites folded into the cream cheese with sour cream and whipped cream topping...YUM Now thats GOOD EATIN"

          I stay away from anything cookie-like. For some reason, I have no problems limiting myself to one piece of a low-carb cheesecake, or one slice of a loaf, or one muffin, or whathaveyou. Put put a plate of a couple dozen low carb cookies on the table, and I will grab 5.

          So basically, I rarely ever make them, and if I do, I portion out my serving, and then hide the rest of them. Its just too easy to keep going back and grabbing another if they're in sight. Bad habits from my previous life, I guess.

            matawguro, this is another variation that's easy to make (I try not to make it too often LOL)

            2 tablespoons coconut oil (expeller pressed if you don't want a strong coconut flavor or virgin if you do)
            1 tablespoon unsweetened cocoa powder
            1 tablespoon heavy cream
            2 packets splenda

            Melt the oil if it's not already liquid, and stir in the cocoa powder, cream and splenda. Drop little dots onto wax or parchment paper and place in the freezer for about 5 minutes.

            The one thing I have done is stopped buying Hershey's or Nestles cocoa powder. After trying other ones like Droste and Valrhona, the other stuff tastes like crap, seriously. And I figured for as little as I have chocolate, when I have it it's going to be darn good.

I mean, you're supposed to eat it slowly and maybe with a tiny teaspoon, and and and take a couple of hours between each bite during which time you're walking a couple of miles and doing weight training......"

              Walking around & weight training, that's a good one!!!
              Mine would be taco dip (w/pork rinds), I can eat half the recipe in one sitting!

                Well, I read all these posts and have come to this conclusion: there are some things we just shouldn't eat anymore. After all, didn't our addictions to bad foods get us here? Why should we continue encouraging those bad habits? I ate something sweet (but legal!) for the first time in 4 1/2 months yesterday and all my sweet cravings came rushing back. They are very difficult to control. I told my wife that I didn't believe I would ever eat anything like it again ---- ever.............. It's just not worth it to me. Thin for life is just more important than tastes good for a moment...........

                  For me, it's probably anything with flax - muffins, "bread" (the microwave version), hot cereal alternative.

                  Can't seem to get enough. The dogs and I are so regular, it's scary.

                    For a treat, I make my own applesauce with apples, cinnamon and one small packet of splenda.... as a treat, let me say.

                    It is so yummy and smooth that it can be deadly. I have one tablespoon for dessert but it can easily turn into more if I am not careful!

                      Soga-- you know, you are so right! Speaking for me, there are just some things I can't have anymore. I made bikergoddess pizza because I thought it would be fine, being low-carb and all. It turned out I ate the whole thing in less than 12 hours. I think even if the food, itself, isn't the trigger, there's something about it that is so dangerous--texture, memories, pejorative programming. There's something that says, "Hey. I shouldn't emulate these food items because they got me into trouble in the first place." It can be similar to a gateway drug. So, for me, I don't--and can't--try to emulate old foods I used to eat because I get the same reaction I always got. And I'm just not anxious for those old histories to ever repeat themselves again.

                      So, the short answer is 'anything pizzalike'...the long answer is, there's nothing worth the risk.

                        Mine is blobs...clouds...whatever they are. I mix cream cheese, cocoa powder and some DaVinci syrup. Mmm...deadly and I can easily eat a whole block of cream cheese that way. I haven't had any in a few weeks, and I'm really trying to kick the habit.

                          Strangely enough, as I've toned down my sweet tooth I've found a love in sour cream...it used to taste so nasty to me, but now it tastes rich and tangy. I just add a little SF syrup and mix....yummmmmmm.....I LOVE sour cream!!!! Admission is the first step to recovery.... My husband was so disgusted the first time he saw me eating it. lol I only eat it rarely, though, and save my sour cream for recipes.

                            I have to agree on the blobs. JoAnne told me the other night how to make them, and I made some. It was delicious, and for a chocoholic, as dangerous as can be. If I go to make anymore, it will be one tablespoon only.
