    My experiment last nigh turned out great!

    I mixed
    2 tsps curry powder
    1/2 cup mayo

    I let it chill over night. I have always found curries so much better after melding for a bit.

    I mixed 2 tablespoons with leftover turkey and some chopped celery.
    I am gonna try it with chicken, pork and egg this week. I have enoufgh curry mayo to last for the rest of the week.

    I ate them on a couple of pork rinds but I am gonna try the mock bread recipe tmorrow. I am even thinking about making a cheese taco for my curry salad, now, too!

    Sounds yummy! You know you can also make those taco shells flat and after they cool break them into "chips" to use for dipping!

      So true!!

      I was also thinking about subbing cream cheese for the mayo and making a spread with finely chopped salad veggies. I find I do not miss carbs as much as long as I have loads of different textures.
      A little Splenda could be added to the mayo or cream cheese for a little more depth of flavor. None for me as yet for I am still in induction.

          did we ever get any curry powder recipes posted? I know Nl had several curry posts but I didn't every see one for making the powder from scratch.

            I bought my last curry pre- mixed from the Farmers Market in Atlanta.

            The term curry refers to a blend of spices. I prefer garam masala, an Indian blend, but I will eat any of them!!
            I found this little blend online, I am going to try it when I run out of my stash I have now.

            2 tb Cumin
            1/2 ts Crushed red pepper
            1/2 ts Mustard seeds
            1/2 ts Ground ginger
            2 tb Ground coriander
            2 ts Turmeric

            Pulverize to a fine powder. (Use that coffee grinder collecting dust in the cupboard) Store in airtight container.

            Makes 1/4 cup.


            When using curry I always cook the powder in the fat in the pan on low heat for a few minutes until you can smell it. Then I add in veggies and meat. Before Atkins, I always put in apples and raisins along with chicken and sweet onions. I love a sweeter curry!!

            Always make a double batch 'cause curry tastes soooo much better the next day!!
            Have it with some cauli-rice!! Yum!!

            Geez I know what I am making tomorrow!
