Cream of Cauliflower Soup (induction friendly)

  • Cream of Cauliflower Soup (induction friendly)

    I make this alot in the winter, it's a really nice soup and very very easy. It's also a good way to get in your veggies. Tonight I measured out the ingredients so i could post:

    approx 4-5 cups cauliflower
    1/2 cup chicken broth - if store bought watch ingredients/carb count
    1/2 cup heavy cream
    2 tbspsn sour cream
    salt/pepper to taste

    Put cauliflower in a pot and cover with water, bring to a boil and cook until very soft, about 10-15 mins. Once cooked, drain cauliflower but keep in pot, reserving about 1 cup of water from pot in a separate container. Add chicken broth, heavy cream and sour cream and about 1/2 cup of chicken broth. Blend with a hand blender (careful it may splash) until smooth, adding additional reserved water to desired consistency. This can also be done in a regular blender. I like to leave it in the pot so i can heat it back up if it becomes cool from the cream etc.

    Add salt/pepper to taste.

    For the entire recipe (makes 4 + servings):

    Cals: 590
    Fat: 51g
    Carbs: 26g
    Fibre: 11g
    Protein 14g

    I like to top it with shredded sharp cheddar.

    Some other additions you can try (adjust carb counts):
    1/2 broccoli, half cauliflower
    Roasted red peppers
    leeks
    mushrooms
    crumbled cooked bacon

        sounds good. Does it turn out kinda grainy though?

          Nope it's not grainy, though It's a thick soup..have you ever had potato soup? that's what it reminds me of - and was my inspriation, I loved potato and leek soup! You should cook the cauliflower until it's quite soft..then add as much of the cooking water as you want to get the consistency you like...

          Not sure what it would be like with a regular blender but i'm sure it would be smooth as well..i've always used a hand one.

            Cool- I am going to have to try that! Maybe next week... could I use frozen cauliflower? ro do you just use fresh, about how many heads is that?

              Here's a good variation for the cauliflower soup: Clam or seafood chowder. Make the cauliflower soup according to Sadie's recipe, but substitute clam juice for the chicken broth. And add clams or shrimp to it after the soup has been pureed in the blender.

                I've always used frozen, i'm lazy can't be bothered cutting it up LOL..I'm sure fresh would work too. I actually measured it in a measuring cup yesterday to get the 4/5 cups. usually i just throw in a few handfuls..I'm one of those 'do it by eye' kinda ppl.
