    Honeyville (ADBBERS get a discount if you type ADBB in the coupon code at check out) now has both wheat protein isolates the 5000 and the 8000. Anybody tried them both if so which works best for bread?

      Yes, I buy both and use them both a bit differently. Arise 5000 is a very light and airy "flour", very similar to the WPI that was sold by LoCarber.com when they were in business. I use it as a base and is my favorite flour to use in waffles, pancakes, cakes, muffins, etc. Arise 8000 is very similar to vital wheat gluten. The two flours give different results.

      As for bread, you can certainly use both in your recipes. I don't make yeast breads, so I can't tell you how the bread would turn out. I make single "buns" made with eggs; a recipe similar to the 1.5 Carb Bun recipe. When I use Arise 8000 in the recipe, the bun is denser, heavier, chewier; if I use Arise 5000, the bun is much lighter, more delicate. And then there are times when I will use both WPIs in the bun recipe.
