    Ok, does anyone else think I need to cut down on posting here?? This is my first time really cooking, let alone cooking low carb, and I am filled with so many recipes and questions! Sorry for having soooo many.

    Either way....

    what is the purpose of using seltzer water in baking recipes? Are there any substitutes? I'm fixing to make some biscuits later this morning and just wondered what this happened to do to the batter.

    It adds carbonation which acts as a leavener for baked goods. You'll see seltzer water used in some Kosher recipes because Jewish cooks use it in place of yeast for certain foods.

    You can substitute baking powder or baking soda for the seltzer water. If you are using baking soda, your recipe will need something acidic in it, like buttermilk, lemon juice or even vinegar in order for the baking soda to bubble.
