    My wife and I just got our first grill for our third anniversary. I have been on Atkins for 4 of the last 6 months and have been going strong again here for almost a month.

    My question is: what awesome low carb grilling and BBQ recipies and/or websites do you guy know of?

    We grill out at least 4 nights a week. One of my family favorites is when I take any cut of chicken, put it in a ziplock bag, and marinate it in Italian dressing for a few hours before cooking on th grill. I'm using Carb Options Italian dressing, or you can make your own.

    I also recently bought a metal fish basket so I can grill fish. For salmon, I make a glaze of 1 part dijon mustard to 2 parts SF/LC "maple" syrup.

    My alltime favorite, though, is veggie packets on the grill. Get out your list of acceptable veggies, chop them into 1 or 2 inch pieces, place them on a square of heavy duty aluminum foil, add either a bit of olive oil or a pat of butter, plus your favorite herbs (oregano and thyme work very well), place another piece of alum foil on top and seal all edges. Grill over low heat for about 15 mins, turning every 4 mins or so. YUM YUM and more YUM. In place of oil or butter, you can also add a few tbsp's of italian dressing to the packet.

    My favorite veggies in the packet: zucchini, radishes (try this! they are great grilled), green peppers, leeks, green beans, and a small piece of onion. It's good to add the green peppers and radishes, because they are on the 2 cup list and you get that much more in your packet.

      If you want to buy a grilling book with great recipes that can be easily converted to low carb, I suggest How to grill by Steven Raichlen. Step-by-step instructions (with color photos).
