  • A New Twist to our Beloved Mock Danish

    I don't eat plain eggs, so flax cereal or mock danish tend to be my mainstays for breakfast. This morning I experimented a bit with the mock danish recipe and YUM!

    I recently bought some Da Vinci SF Strawberry Syrup, but had no idea what to do with it. So this morning I made my mock danish and, as usual, reserved some of the cream cheese to put on top...about 1 tbsp, I'd guess. I mixed the cream cheese with just enough strawberry syrup to thin it down but not make it too thin, and added it to the top of the cooked mock danish, then nuked for about 10 seconds.

    It was great! Added a nice sweet fruity taste to the danish!

    For anyone interested, my Mock Danish recipe (which is a bit different than others) is:

    1 egg
    2 oz cream cheese
    1 tbsp unprocessed wheat bran OR 1 tbsp ground flax seed
    pinch of salt
    1 tsp Splenda
    1/4 tsp Cinnamon


    In a small bowl (like a cereal bowl) nuke cream cheese in microwave until soft. Reserve 1 tbsp of cream cheese for frosting and set aside.

    Mix well: egg, wheat bran OR flax seed, salt, splenda, cinnamon and the larger portion of cream cheese. Microwave on high for approx 1 minute or until top appears slightly dry and rest of "danish" appears "done". Take out of microwave.

    Frosting: Mix well reserved 1 tbsp of cream cheese with enough flavored SF syrup to thin cream cheese out (but it shouldn't be watery). I imagine any fruit-flavoried Da Vinci syrup would be great!
    Frost the center of danish with this mixture and return to microwave for 10 seconds.

    Remove warm danish from bowl and put on a separate plate. If you want to eat it right away, place in freezer for about 15 minutes until cooled. Otherwise, place in fridge for an hour or so.

    Note: I add the wheat bran and/or flax to give the Danish a better texture -- less eggy -- and to simply add fiber to my meal.

      for people who have reached the nut rung, I recommend some chopped almonds as garnish. With whipping cream, it's really good. :yes

          I use regular Philadelphia cream cheese, it is the most popular for these dishes.

              what's the recipe for the mock danish? I saw it somewhere can cannot find it. And, is this ok for induction.

                It's up in the Recipes section (button at top right hand corner of your screen). Just do a search for "Mock Danish" and you'll find it -- and lots of other great stuff in there too!
