  • The best grilled Tuna!

    I finally got my BF to agree to try some grilled tuna, he is not much of a fish eater so this was a big deal....I fixed it last nite and he LOVED it!! Yea, now we can have fish at least once a week w/o me having to fix 2 differnet dinners...anyway, here's the marinade I used and it is delicious!

    1/4 cup olive oil
    4 teaspoons of Old Bay Seasoning
    juice of one Lemon
    Juice of one Lime
    1 heaping teaspoon of dried parsley
    1 tsp ground cilantro
    almost forgot 1 heaping teaspoon of chopped garlic (or more if you like!)
    1 pound of fresh tuna steaks

    Mix all ingredients together and pour over fish let marinade for 1/2 hour to 1 hour. Grill! Enjoy.

    Paula Wolfert has a wonderful tuna steak recipe in her Slow Mediterranean Kitchen cookbook.

    It features a sauce made of capers, olives, celery, and garlic with EVOO, vinegar, and a bit of water to temper things The tuna is basically seared, then finished overtop of the solid and liquid sauce ingredients, then the whole thing is chilled overnight and served at room temperature the next day with lots of fresh mint.

    I have to say it is one of the most subtle yet flavorful tuna preparations I have tried, and that book is most definately one worth picking up as there are tons of great recipes inside that can easily be made Atkins friendly.

      Both of those sound really yummy --- For some reason or another this has been like the summer of lime for me...I find myself using it on everything.
