  • Flax Eating for Flax Hater

I have read a lot about how great flax is on low carb diets, and how versatile it is, and how many of you manage to eat it every day. Here is my problem:

    I can't stand the stuff.

I've tried making the flax crackers, the garlic flax crackers, flax 'bread' for hamburgers, and the stuff is so gross I just can't stand it!

Does anyone have any suggestions for how I can sneak it in without knowing it? Or any other recipes maybe I've overlooked but should try?

    Thanks so much!

I make a basic batter with flax and protein isolate. I flavour it various ways.

    Dry ingredients:

    2 tablespoon flax
2 tablespoon unflavoured protein isolate (stuff body builders use)
2 tablespoon (a) Italian mixed herbs or (b) unsweetened cocoa (not on induction?)
    1/4 teaspoon baking powder

Wizz all these in coffee grinder.

    Wet ingredients

    1 egg
2 tablespoon cheap olive oil (or other oil, or mixture of oil and melted butter)
    about half cup of water

Mix all together in a bowl with a fork.
Put into small plastic container an zap in microwave (2 - 3 minutes)

Or you can increase flax and protein powder slightly and add the juice and finely grated rind of a lemom - makes a nice lemon cake but looks better with golden flax. The lemon and chocolate cake may need some sweetener.

    ---

If you don't like flax on its own the protein powder may make it more acceptable. There are other receipes on the board that use a mixture.

make flax pancakes if you can handle cream as part of your phase of Atkins and your metabolism. they are like autum grain hotcakes in texture.

      1T cream
      1Tsour cream
1T oil ( I use EEOV and you can't taste it)
      1 egg
      mix all together

      1/4 c flax meal
      1/2 baking powder
optional spinkle of cinnanon or pie spice
      mix together
Add dry to wet and let it sit for 5 min to develope. heat greased skillet on med heat.
add batter by tablespoons to pan should make 4 cakes. cover and turn to low heat cook 4 min or until top looks set. gently flip and cook 4 more min.
2 of them should be enough for 1 serving
I like them with low carb pumpkinbutter. other eat them with low carb syrup or sprinkled with Spenda and cinamon.

you can just add it as the filler in your meat loaf and you will not even know it is there.

Heidi is our resident Flax Hater, so you aren't alone.

I not too crazy about flax because I find the slimy, gooey texture too slimy and gooey (and I'm a total fan of okra so that's saying something!)

If you are using it as a fiber supplement, you can substitute psyllium husks or wheat bran instead. If you want the omega-3s of flax, there are plant substitutes as well, like walnuts and a vegetable called "purslane". Animal products like fish oils contain the Omega-3s too.

boy am I glad I never did the flax water thingie until after I'd done the muffins and pancakes and mock danish with it first. if you think of it as snot to quote one of the haters it is hard to swallow. just think what aversion you'd have to eggs if you had been eating thewm raw first.

Actually unsweetened cocoa is induction friendly if I'm not mistaken.

It is on the list - as a "spice".

But at 3g carb per tablespoon it's too high in carb to use during induction in a flax muffin recipe.

The brand of cocoa I buy, called Fry's (i believe it's English?) has 3g carbs, 3g fibre per tbsn.

I find them all different in counts. Not sure why, but that's the best one I've found so far.

have you looked at the carbs in a tablespoon of cinnamon or herbs Brian?

my Herseys cocoa podwer says 1Tablespoon has 3 g carbs and 2 g of fiber giving it only 1 g of carb for one T

sadie if it is a UK product then those are net carbs as the fiber has already been removed
the subtracting the fiber from the total carbs on a label only applies to countries that follow the US FDA label laws.

lol...that' must be very cinnamony. I'm a homebaker. So, the only times I've used 1 tablespoon of more of cinnamon is when I bake cinnamon rolls for the family. My apple pies and apple cakes usually call for 1 teaspoon of cinnamon at the most.
