Hello Everyone, I have recently started Atkins on 7/15/04 so i am still on induction phase. would anyone happen to have any breakfast ideas for me besides eggs. anything would be greatly appreciated! thank you!

Hi, think outside of the box.
Eat leftovers for breakfast: cold roast chicken or turkey slices, cheese, smoked salmon with cream cheese etc.
Try the mock hot cereal recipes made from flaxmeal or wheat bran. Or the pancake recipes made from flaxmeal.
During my Induction, I used to eat BLT wraps: bacon, a slice of tomato and mayo rolled in a lettuce leaf. I also used to eat tuna cakes with mustard mayo (1 can tuna, well drained, mixed with 1 egg, 1 tablespoon chopped onion and salt and pepper. Divide into patties, and fry in oil over medium heat until crusty and browned on one side. Flip and continue frying until crusty and browned on the other. Serve with a dip of equal parts of Dijon mustard and mayonnaise), chicken cakes (sub cooked chicken meat for the tuna) with a salsa-sour cream sauce (equal parts salsa and sour cream), etc.
If you're just tired of eating eggs, try them in different ways. Make a quiche. Make the Revolution Rolls recipe (I use them as buns for lunch but as "bagels" for breakfast)

OK, I have two fun ones for you:
1. The mock danish is awesome! It is easy to become addicted though so this might actually be best for OWL when you break your sugar cravings. There is a recipe on here somewhere but I will post my fast one:
1 Egg
2 Ounces Cream Cheese
1/4 Packet of Splenda (more if desired)
1/2 Tsp of Cinnamon (more if desired)
(You can also omit or add anything to make this yummy- try making a lunch time one or a strawberry cream cheese one with DaVinci's SF syrups- experiment!)
Microwave your cream cheese in a small bowl until soft (20 sec's in mine). Mix soft cream cheese with splenda and cinnamon- take out a spoonful to reserve for frosting. Mix egg with remaining cream cheese, little lumps in the end are ok. Microwave the egg and cream cheese mixture for 3 minutes (again, cooking time may vary). The longer you microwave the more like bread it gets. Remove from microwave (turn bowl upside down on plate) and frost- YUM!!
2. Breakfast "Muffins" are so cool because you can make them up ahead of time and through them in fridge in Ziplocs for fast snacks or breakfast on the go. The egg is cooked so long that it ends up having the texture of bread- trust me, its good!
1 egg for each muffin you plan to make
1 strip bacon for each muffin
1/8 cup loose breakfast sausage for each muffin
Sprinkle of cheese for each muffin
Pan spray
Muffin Tin
Pre-heat oven to 325-350 (depending on oven, may have to play a little with it). Cook your breakfast sausage (loosely) in a skillet until done, drain. Spray muffin tin with non-stick pan spray. Take each muffin hole and line the sides with your strip of bacon, sprinkle sausage on the bottom of each one. Mix eggs in bowl and pour in each muffin hole until about 3/4 full. Sprinkle cheese on top. Place in oven and cook for maybe 20-30 minutes or until bacon looks done and cheese is well melted.
Sometimes I like to chop up mushrooms and mix with my egg mixture to change the taste- try whatever you want (in accordance with your Atkins stage of course!).
