  • Stuffed french toast

    My take on the atkins french toast recipe (I make mine with flax, I dont know how this would turn out with pork rinds)

    Just make mini pancakes out of the batter. Mix cream cheese, splenda, and vanilla extract to taste and sandwich it between two mini pancakes. I stick mine in the fridge for a while to solidify, but you could probably eat it warm too. yum yum!

    Kibs, I have had the flax ones as well as the pork rind ones and believe it or not I like the pork rind ones better they seem to have a more bread like texture, and I didn't care for the flax texture seemed a bit slimy inside to me might have been the way I cooked it ensive

      I haven't tried the flax one but do love the pork rind ones. Your recipe sounds delicious. Thanks, Ill give it a try

        Its addictive, I can't believe its induction friendly, and i'm getting my flax in at the same time too! I have to be careful or i'll eat want to eat it all day long lol :eating

        you can also spread the cream cheese onto a big "pancake" then roll it up and cut it into pieces like little cinnamon rolls. I think without the baking soda it would roll better.
