  • Strawberry Jam/ Jelly?

    Anyone have any ideas on what to do with the tons of fresh strawberrys that I have that are going to go bad in about a day or 2? I was thinking mabe a sugar free jam, but I don't have a recipe so if anyone does have one or any other ideas on what to do with them I would appreciate it! Someone told me I can freeze them, but they get all mushy, right?

    I had a bumper crop of raspberries this year, and was really disappointed that I couldn't eat them fresh. However, all was not lost!

    Gently wash your strawberries and take off the stem and leaves (use a knife if necessary). If the strawberries are large, cut them in half, length-wise. Place them on a cotton kitchen towel or paper towel and let them air dry for a few minutes. Then place the strawberries on a cookie sheet, being careful not to overlap them or place any on top of each other. You may need several cookie sheets, or just do them in several batches. There should be some air space around each strawberry.

    Once frozen solid (I usually wait 6-8 hours), place the strawberries in a ziploc freezer bag. Seal, getting out as much air as you can. Put the bag in your freezer.

    That's it! Once you hit the berry rung of OWL, you'll be delighted to pull these out and have great strawberries!!

    The only time they get "mushy" is if you add sugar to them before freezing, or if you don't give them plenty of air space when freezing.
