    How about an "Iron Chef Atkins" challenge to liven things up?

    Playing Kaga, I shall bite the bell pepper and unveil the theme ingredient. The curtain rises on the Atkins Kitchen Stadium, a place well stocked with all kinds of appetizing low carb ingredients. The elaborately decorated cover is pulled off of the table, and the theme ingredient is revealed in all its white and pristine glory! It is....

    Cauliflower.

    Iron Chefs, start your (virtual) cooking!

    I will begin with my Horseradish Cheddar Mashed Fauxtatoes.

    Steam (not boil) two heads of cauliflower until very soft. Press them in a sieve to remove as much water as possible. Place them in a food processor with 8 oz of cream cheese, a sprinkle of salt and pepper (preferably white pepper) and 2 tsp fresh grated horseradish and blend.

    Place this mixture in a casserole dish and top with shredded horseradish cheddar (or regular extra sharp cheddar) and freshly ground black pepper. Bake until the cheese is nice and bubbly. Serve to several stern-faced Japanese judges and one giggling schoolgirl-looking actress who sounds like she's about 12. Or just eat it yourself.

      Naja these sound wonderful. I will have to put my chef's hat on an come up with something inventive.

        Don't forget to say "If memory serves me right..." lol! I love your idea! I have no imagination so I'll have to be a bystander to see whose cuisine reigns supreme. Already getting inspired tho'!

          Oh, i want to play. Cauliflower is on sale for a buck each and I want to try out this recipe before I really submit it. But my entry is going to be Fried Cauliflower, but instead of using flour to coat, I am going to coat it in pork rinds. It might turn out nasty. Will let you know.
          Also I am dreaming of some sort of cauliflower soup with bacon and cheddar cheese. Have to think about that.

            I like to boil mine then add a cheese sauce that is a mixture of cheddar, swiss, a shake of garlic powder, lemon juice and parmesan all cooked with cream to suit your texture. Maybe a little sherry for those inclined. Top with crumbled bacon. You could also leave the cheddar out, add more swiss and top w/capers, thin slices of lemon and serve with any kind of broiled fish topped with butter and lemon juice and capers..

              Not at all. I'd suggest lightly steaming the cauliflower florets, draining them, dipping them in a mixture of beaten egg and water, and then in a breading of pork rinds with a bit of spice and perhaps (depending on your rung) another low carb flour substitute as well. Baking would work for these morsels, so would deep frying.


              Also I am dreaming of some sort of cauliflower soup with bacon and cheddar cheese. Have to think about that.

              Try this: steam the cauli, drain well, puree in food processor, use as the base for your soup. Add chicken broth and some heavy cream and/or sour cream. Add finely shredded cheese at the last minute when you are satisfied with the soup's creamy texture already, don't boil the cheese or it tends to go nasty. Continue cooking only until the cheese is melted and blended, stirring constantly, and serve immediately.

                I've made the fried cauliflower by dipping the florets in an egg wash and then in parmesean cheese, it was really good that way.

                  Cauliflower soup (copied from an old thread i posted before).
                  I make this alot in the winter, it's a really nice soup and very very easy. It's also a good way to get in your veggies. Tonight I measured out the ingredients so i could post:

                  approx 4-5 cups cauliflower
                  1/2 cup chicken broth - if store bought watch ingredients/carb count
                  1/2 cup heavy cream
                  2 tbspsn sour cream
                  salt/pepper to taste

                  Put cauliflower in a pot and cover with water, bring to a boil and cook until very soft, about 10-15 mins. Once cooked, drain cauliflower but keep in pot, reserving about 1 cup of water from pot in a separate container. Add chicken broth, heavy cream and sour cream and about 1/2 cup of chicken broth. Blend with a hand blender (careful it may splash) until smooth, adding additional reserved water to desired consistency. This can also be done in a regular blender. I like to leave it in the pot so i can heat it back up if it becomes cool from the cream etc.

                  Add salt/pepper to taste.

                  For the entire recipe (makes 4 + servings):

                  Cals: 590
                  Fat: 51g
                  Carbs: 26g
                  Fibre: 11g
                  Protein 14g

                  I like to top it with shredded sharp cheddar.

                  Some other additions you can try (adjust carb counts):
                  1/2 broccoli, half cauliflower
                  Roasted red peppers
                  leeks
                  mushrooms
                  crumbled cooked bacon

                    Mmm, the cauliflower soup sounds yummy.

                    I will add Cauliflower Faux Rice to the dishes that are now set before the judges in the Atkins Kitchen Stadium (that's all of you guys).

                    Coarsely grate raw cauliflower until you have small chunks about the size of rice grains. Steam briefly a dash of chicken broth in the microwave until tender, then saute with butter and spices to your taste in a hot pan, stirring frequently. Curry spices work very nicely for a hot curry "rice" to accompany something like chicken in a coconut cream sauce, but count the carbs in the curry spice and don't use a commercial mix that contains sugar or food starch.

                      Curry that sucker!!!!

                      in a pan with hot oil put
                      1 tbl crushed garlic
                      1 tbl crushed ginger
                      1/4 cup minced onion
                      and one seeded diced tomato
                      1 Tbl black mustard seeds

                      saute over med high heat stirring until water is evaporated and the mixture stars to brown

                      then when it is ready add some madras curry powder (good fresh stuff not old flat curry powder) about 3 tbl should be enough
                      1/2 tsp ground cumin
                      1/2 tsp hot chile powder (I use more)

                      saute' that in then add one giant cut up cauliflower to the mix stir until coated with the curry

                      then add just enough chicken broth to make a thick sauce..turn down the heat and simmer until cauliflower is crisp tender ...at this point I like to add some coconut milk and since I usually have a half cup in the freezer I will use that ..if you do not want to open a can you can add heavy cream then just heat it through...
                      serve with low carb tortillas if you eat those or...just eat in a bowl

                      this is a pretty strong curry for a veggie!..but since I can not stand the taste of cauliflower this is perfect for me

                        Oooo...I'm in!

                        Roast the cauliflower first...coat it in olive oil, S&P, roast it till it's almost black...how can something that ugly taste so good? lol
                        Let it cool (well, we eat it for dinner and this is what I do with the leftovers, but since this is a competition, I'll skip that part...) and chill it in the fridge.
                        Mix sour cream, S&P and curry powder or if you prefer, just cumin and dress the roasted cauliflower. Chill for a few hours to let the flavours mingle.
