Can anyone give an example of an ounce of cheese or meat or seeds would be?

There's no real "easy" answer to this question.
To estimate an ounce of cheese, the easiest way is to buy an 8 ounce block of cheese and cut it into 8 equal pieces.
To estimate 3 ounces of meat, dieticians usually say it's the size of a standard deck of playing cards (length, width and height of the pack of cards).
To estimate seeds and nuts---really there is no clear cut way because the size and weight of nuts vary too much.
But the best way, by far to figure out how much something weighs is to weigh it. You can purchase "diet scales" for less than $10.00 at most places.
I have used some of the things Megs has mentioned for years ....and now I have won money betting I can pour, cut, measure an exact portion without using a measure...all it does is take practice ....when you get used to seeing/feeling a size ....
for nuts just take a 16 oz bag devide it into four equal portions then you have 4 oz each then if you only want an oz you just devide that 1/4 into 4 voila
a scale is ok too but this works better for me I love math!
