i want some chicken tonight, and i wondered if i could fry it? I thought maybe roll it in egg and then roll it in grated parmesan cheese. Like parmesan chicken and then fry it. Would this be induction friendly? and what kind of oil would work best?

That would be induction friendly. Don't use butter because the butter solids burn and turn brown, which can affect the appearance and taste of your chicken. Use something like a light flavored olive or canola oil.

For frying you typically want an oil with a high smoke point, I like to use peanut. Deep frying works very well for parmesan crusted chicken fingers.
BTW - this goes in food/cooking, I'm moving it there.

That is the way i do it. I roll in egg then the cheese and then fry with a mixture of olive oil and butter - or sometimes olive oil and peanut oil. Get the oil hot enough so that it does not soak up into the chicken too much. then back it off so the cheese does not burn - and make sure to use a good non-stick pan. I need to try the deep fry method but that is a lot of oil to deal with.
Sometimes I do my in crushed pork rinds too and then dip in the Zero Car /Zero Calorie honue mustard. Brand is Walden Farms - it is not thick like the real deal - but it gives something to dip it in other than blue chese dressing all the time. (which you can do with some hot sauce added too)
To me it has just become mind over matter - eat to live - ya know.

IF you can't find a legal honey mustard dressing in the store. You can improvise by mixing Dijon mustard with a little Splenda or stevia. Thin it out with a light flavored olive oil if you like.
Also I didn't think of this earlier, but you can bake those fingers. PUt them on a cooking parchment lined cookie sheet or a foil lined sheet (grease the foil VERY WELL!), and bake until cooked through and gold brown.~Megs~
