  • Cheese sauce & faux macaroni and cheese

    Hello all,

    I've been playing around trying to find a really good cheese sauce recipe, and finally worked one out. I'll post it in the recipes section, but thought I'd share here too.

    This came about because I noticed that cream cheese has guar gum in it -- which is a thickener. Cheese sauce made with just cheese and cream is OK, but separates and doesn't have the right flavor. This one tastes like "nacho chips cheese" and is great on veggies, pork rinds and more (see end of recipe).

    EASY CHEESE SAUCE

    1 oz cream cheese
    1/4 cup heavy cream
    1 cup grated sharp cheddar cheese
    1/2 tsp yellow mustard

    In a small pan on LOW heat, place cream cheese and cream. Stir frequently until cream cheese melts and blends in with cream. Add grated cheddar cheese and stir until cheese melts thoroughly. Add mustard and stir again. If needed, add a bit more cream to make this the "sauce" consistency you want.

    This is excellent warm as a cheese sauce for everything you ever used a cheese sauce for. HOWEVER, if you have leftovers and put it in an airtight container in the fridge, the next day you have a wonderful CHEESE BUTTER! You can add a pat to the top of a steak or to hot veggies!

    If you want a spicier cheese sauce, add a few drops of hot sauce, some cumin and chili powder.

    OK, now to take it one step further.

    FAUX MACARONI AND CHEESE
    1/2 head cauliflower
    Cheese sauce above (double the recipe)

    Break apart cauliflower head (you don't want just the flowerettes - include some of the small stems too) and cook in boiling salted water for 10-12 minutes or until JUST tender -- not mushy. Drain water. Place pan and cauliflower back on burner on LOW heat for 1-2 minutes to dry cauliflower out a bit. Turn heat down to lowest setting, and while pan is still on the burner, use the end of a wire whisk to chop up cauliflower. You're turning it into small chunks, not mashing it! If there's any moisture at the bottom of the pan, leave on low heat and stir in a small amount of salt to get rid of the excess moisture.

    Remove cauliflower from heat and add cheese sauce. Sprinkle a little paprika on top or garnish with a little crumbled bacon. Serve immediately.

    Wow Joan - Sounds great - I will have to try tat - baked mac and cheese is a fam tradition and I am glad to say I was at a fam BBQ last Sat and did not even so much as touch it - to my cousin and brother's delight since they took my portion!

    I will def give this a shot - the other thihng you can do is steam the cauliflower so that it has less water!

          Val - do it - it is great!! I think it is ret ovre eggs for breakfast too - If I remember you are still keeping Kosher through all this so that may not work for you....but there are a million other things that this stuff is great for that would work!!!

            Actually, it's perfect for eggs as well. There's no meat products at all...

            A little lesson in kashrut: both eggs and fish, along with all "natural foods" like fruits, veggies, nuts, beans, rice, flour, seeds, breads, anything that has neither milk nor meat products in them is considered pareve. This means you can have them with either dairy foods (like the cheese sauce) or meat foods. So interestingly, chicken and all other fowl are meat, but eggs are not. Don't know exactly why fish isn't meat, either, but I didn't make the rules, I just follow them!

            If you look at the label of foods in your pantry, many of them will have a U inside an O on the label, and sometimes there will be a D or P next to it. This means the food has been deemed kosher by the Orthodox Union, which is like the supervising board for food production. The D or P will indicate whether it's dairy or pareve. If they don't have the D or P, I usually just check the ingredients.

              Yeah I remembered most of that but for some reason my old roomy never ate cheese with eggs. Not sure - maybe he just did not like it. I guess I just assuemed that it was an issue since it was chicken in a way- sorry for being so dumb.

              It has been about 8-9 months since I was living in the Kosher kitchen world......lol. It is so funny though that after living with him I am always checkin thins for the symbols/letters. LOL I am like - hey, this is Parve it will go with everything and my friends are like - what the heck are you talkin about....lol
