    I was invited to a Tapas party last week. So, I borrowed a Tapas recipe book from the library and have been making a few of the recipes (the make great side dishes or main courses!)

      well just in case you guys choose to have a party let me toss in the recipe for the best hot wings on the planet ..it is my secret recipe

      may be doubled ..or tripled or whatever


      12 Fresh whole wings

      take and cut them up put them in a large bowl of water with 1 cup of Kosher salt while you get everything together then drain well spread on a towel pat dry ...

      something to deep fry in ...filled with oil
      bring it to at least 350 degrees

      while that is heating

      on the next closest burner put a large sauce pan on med
      add the following ...
      1 stick unsalted butter
      1/2 cup Franks orig hot sauce
      1/2 cup Lousiana Brand hot sauce
      1/2 tsp of celery seed smashed (secret)
      sqeeze of fresh lime juice
      1 tbl New Mexican ground red chile

      let simmer when butter is melted in sauce

      fry wings in the oil so they can float freely for about 15 min or until golden and crispy
      then take them out of the oil with a slotted spoon and drop them right in the sauce stir around take them out of the sauce again with a slotted spoon and put them on a baking sheet in a warm oven while you keep frying ..when they are all done ....serve with the traditional cut up celery and
      I take a jar of Maries Blue cheese dressing, mix with a pint of sour cream and some fresh crumbled blue cheese....
