I love bacon but I know that we are suppose to stay away from nitrates, and the reason is that nitrates can react with amino acids in the stomach and form nitrosamines, which are know carcinogins and the crisper you like your bacon, the more nitrosamines it contains.
I found a couple sources for nitrate free bacon. Trader Joes house brand of bacon is nitrate free, and they also carry Coleman Natural Products, and Wellshire Farms which both are also preservative free meats.
