    Last night I got courageous and crumbed up some pork rinds. I don't like them, but when I coated chicken breast with egg then in crumbed pork rinds and fried them in canola oil, I was amazed at how the flavor of the rinds disappeared! I also used Mrs. Dash original seasoning and some garlic powder. Pork rinds make a great coating and it can be flavored so well too.

    BTW, my son, who is diabetic, has started getting salads for dinner and has switched to drinking water instead of soda. His work schedule puts his dinnertime at 1 or so in the morning, so he goes to McDonald's to get his salads. Yeah, I've talked to him about making a salad and taking it to work, but he's stubborn. lol! At least he's changing on his own accord. He says he's been enjoying the new way of cooking I am doing and he's the better for it. We all are.

    Thanks to this board and the helpful people here, my family is happier and healthier. :icondance

    Glad you enjoyed the chicken, pork chops are great that way too!

    Also, If you haven't tried it--do the same thing but use parmesean cheese instead of porkrinds (the grated kind in the can works best) you can spice it up too and it looks and tastes delicious!

      I love the parmesan cheese! Are you suggesting the Kraft canned parmesan or the fresh block that I can buy in the deli? Sorry for so many q's...

        get the Kraft kind from the can. Use it instead of the pork rinds! Oh it's so good.
