    Note this is not induction friendly!

    As i mentioned in the Val. Day treats thread I made these last night and found they had a bit of a soy aftertaste. I tried them again today, and they seemed to taste a bit better (they were cold..last night they were still a bit warm) I still think they'd be better with almond flour, or at least half almond flour.

    For valentines day, I didn't end up frosing them. Instead, i crumbled half a brownie in the bottom of a small wine glass, topped with a layer cream whipped with cocoa and sweetener, some slice strawberries. Then repeated.

    This desert was to die for..and looked really impressive! Unfortunately my camera had no batteries. so no pics.

    My husband and stepdaughter had no idea it was low carb till they saw me having it.

    George Stella's Brownies

    1 1/2 tablespoons wheat bran, or oat bran
    1 1/4 cups plus 1/2 tablespoon soy flour
    4 ounces unsweetened baking chocolate
    1/2 cup unsalted butter
    2 cups sugar substitute (recommended: Splenda)
    1/2 cup heavy cream
    5 large eggs
    1 tablespoon no sugar added vanilla extract
    2 teaspoons baking powder
    1/2 cup chopped walnuts

    Low Carb Chocolate Frosting, recipe follows

    Special Equipment: 8-inch square baking pan

    Preheat oven to 325 degrees F.


    Spray pan with nonstick vegetable oil cooking spray. Set aside. Mix wheat bran and 1/2 tablespoon soy flour together and sprinkle evenly over the inside of the greased pan, also coating the sides.

    Place the unsweetened chocolate and butter in a steel bowl and melt over a saucepan of simmering water. Whisk in 1 cup sugar substitute and 1/4 cup heavy cream. Once thoroughly blended, turn off heat and keep warm until needed.

    With an electric mixer on high, beat the eggs, 1 cup sugar substitute and the vanilla extract just until blended. Reduce to low speed and then blend in the chocolate mixture.

    With a wooden spoon, mix in the baking powder, 1 1/4 cups soy flour, walnuts, and 1/4 cup heavy cream. Spread evenly into the prepared pan and bake on the center rack for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean. (Do not over-bake or brownies will be dry and hard.) Cool completely before frosting with low carb chocolate frosting. Cut into 5 rows by 5 rows to make 25 pieces.

    Low Carb Chocolate Frosting:
    3 tablespoons unsalted butter, softened (not melted)
    5 tablespoons unsweetened cocoa powder
    1 cup sugar substitute (recommended: Splenda)
    1/3 cup heavy cream
    1 teaspoon no sugar added vanilla extract
    Few drops hot water, as needed, to thin consistency


    Place all ingredients in a medium bowl and whisk until well combined. Use to frost brownies, but make sure brownies are completely cooled, or the butter in the frosting will melt.

    Yay, I'm glad they were a success, SadieJen! Everyone loved them at my house, too.

    I have my very first Carbalose pizza in the oven, with dough made in my bread machine, based on a traditional pizza dough recipe. I'm excited to see how it turns out!

        Rye did you make your's with just soy flour? I'm not sure i'd do that again..though the texture was perfect. I undercooked them just slightly so they're like a really moist brownie.

        Let me know how the pizza turns out. i was hoping to order some Carbolose next week!

            Can anyone fill me in on the carbalose? I had never heard of it till this post...I just googled it and got some more infor, but is it considered a frankenfood?

              So, the pizza crust was a bust. It rose & baked just fine, but way way too Carbquik tasting. I may experiment with a few other pizza dough recipes (including one that uses beer) in future, but for now, I think I'll just stick with my soy flour pizza crusts.

              You can read about what's in Carbalose/Carbquik here or here. As always with Atkins, you have to read the ingredients, and eat the food at the appropriate stage and in the appropriate rung. In the case of Carbalose/Carbquik, it should be saved for the grains rung of OWL.

                Making these today Sadie!!!! I asked above if I could do one for one taking out the flour and using almond flour instead? what do you think?also speaking of Chocolate I am heading to Canada land of my ancestry to buy some more Fry's cocoa ..that is the best and the fact it has less carbs makes it even better!!!!

                I love the chocolate you guys have and just realized why it is so good ...my son gave me this long lecture about how ours comes from South America while most of yours comes from Belgium or something...who cares you guys have better chocolate and cocoa then we do ....and that is a fact!
