Once opened, how long does a package of tofu last? The best-before date is about a month out, but I'm thinking once opened the life becomes much shorter. I know it's recommended soy milk be used within a week of opening. would tofu be the same?

I find the only way to keep tofu really fresh is to keep it submerged in water change it daily and unless it looks or smells gross it is fine ..but keep it in fresh water! once you open it the water it is in is no good ...rather than toss it however because it is loaded with calcium use it in something for sure!!!

Here is an article on tofu, it does say that you should change the water like heidi said, you can keep it refridegerated after opening for up to 7 days, you can also freeze it - but it will change the texture although according to this article that is not nesicarily a bad thing, it makes it soak up marinates better, here check it out

Just to add to what MOG said, if you freeze it, and then thaw it, it becomes like a sponge, really soaking up any flavors you may add to it. Squeeze out as much water as possible after freezing.

Yea, I saw a recipe for doing that and making it into a "low carb bread" Aphex, I've never tried it though.

Bread? hmmm. In my vegan days i used to make a tofu/broccoli stirfry with peanut butter and soy sauce, using the frozen tofu. I haven't had tofu in AGES.
