  • Cabbage!

    Hey folks,

    They had a blow-out sale on cabbage at my grocery store this week so I bought myself a 3-lb head of fresh green cabbage, and now I realize I don't know what to do with it! Anyone have any ideas on how to prepare it or special recipes that use cabbage? I've never cooked cabbage before, only eaten it.

    This recipe from Atkins.com is awsome. Skip the balsamic vinegar, and use red wine vinegar instead. It calls for red cabbage, but green would be just as good.

      I love to make cabbage rolls! The best thing about them is that you can make a huge batch and freeze it! its even better the second time around.

      Cole Slaw is yummy too.

      Or how about Corned beef and cabbage.

        I like cabbage rolls too---but I'm too lazy to make them . So I cheat and make a cabbage roll casserole: shred the cabbage. Mix with shredded onion, salt and pepper. Toss that on the bottom of an oven-proof casserole dish. Spread your favorite meatloaf or meatball recipe on top of the cabbage. Cover and bake, until the meat is cooked.

        I also like "sauteed slaw". Basically, I shred the cabbage, mix with some shredded onion (shredded carrots too it if they are allowed in your phase of Atkins). Heat up a skillet. Add about a tablespoon of olive oil. Add the vegetables and cook until the cabbage begins to wilt. Remove from the heat. The cabbage should be warmed through but still crunchy.

        A really super nice way to prepare cabbage is a cabbage tortilla (Spanish style tortilla, not the Latin American style tortilla). Slice the cabbage and par-boil it. Rinse in cold water and drain (this can be done the hours before cooking the tortilla). Per 1 cup cooked cabbage use 1 egg. So beat your eggs, add the cabbage, salt and pepper to taste and mix well. Heat a frying pan and add oil. Dump in the egg and cabbage mixture. Allow it to cook on medium high heat. Don't stir the egg mixture because you want it to set up on the bottom. Slide a spatula underneath the tortilla and flip it over and allow it to cook on the other side. It's okay if the tortilla is browned---the browned parts make it taste better imo. Finish cooking, flip onto a plate and eat.

          We just slice it thinly and sautee it in olive oil, butter and some seasonings (whatever you like). I cook it till it's not too crunchy, almost caramelized. DH says if everyone knew how good cabbage is this way then they would eat it all the time. I told him not to tell anyone b/c cabbage is still pretty cheap. I don't want to see a run on the market. lol

              If it's the crinkly kind of cabbage I like it shredded and lightly boiled; strained, then tossed with pre-sauteed shredded leeks (you don't need too much leek, just a handful or so to flavour the cabbage). Add more liquid if necessary. After a couple of mins sauteeing, add either a dollop of cream or some kind of melty cheese. Use extra virgin olive oil for all the sauteeing.

              A tasty veggie.

                Chop up some bacon and sautee it with just some chopped onion--we're talking maybe 1/4 cup of each (if that--less if you are making small portion) just until the onions are transluscent. Add chopped, sliced, shredded cabbage and about 1/2 cup water, stir it all together. Cover your pot/pan and allow the cabbage to cook until tender.

                The bacon and onion add so much flavor rather than boiling.

                It's good sauteed in olive oil too.

                  I had a wonderful prawn soup last night that had cabbage in it ...it was a chicken stock nd some lime and chile onions and cabbage it was awesome and simple

                  I am thinking this

                  saute' about 4 cups of chopped up cabbage in olive oil
                  with an onion add some hot chile powder and oregano then
                  add some galic smashed maybe 2 cloves
                  and pour a quart of chicken stock into it
                  add a can of coconut milk and some salt and pepper
                  then add a lb of fresh prawns peeled
                  serve with fresh cilantro and lime wedges

                      Cut it into wedges, salt and pepper to taste, put some slices of butter, wrap in foil and grill on our outdoor grill while you meat is cooking. This is SO good! : )

                          Woo hoo guys!! I've sauted the shredded cabbage in butter and added Montreal steak seasoning and I've sauted the cabbage with butter and kielbasa sausage so far, and I've converted DH to a major cabbage eater! I think we are going to try Meg's casserole soon, but all of these recipes are awesome! I might make the prawn soup this week too... looks like I'll be buying more cabbage next week.

                            I never understood why you would use oil and butter. Isn't that redundant?

                              Butter has a yummy flavour and olive oil helps the butter not burn. And it tastes yummy too.

                              I love the sauteed cabbage with steak seasoning! So far it's my favourite. But I'm going to try the wedges in foil once we get the bbq out again. That sounds interesting.
