    actually I read some place that gelatin is not made from bones and crap anymore but I could not swear to it ...it smells and tastes funny to me I like the snap of agar agar it is a fun food to play with .....Scott needs to come back and explain that dish!

        Heidi, it's just teriyaki wings. Even though the polyd/erythritol gave my sauce a little bit of viscosity, I was looking for a little more thickness/coating ability, so I experimented with a few clear thickeners. I first tried xanthan gum- nope, too slippery/slimy. Then I tried adding more polyd. The sauce was thick, but with only a little bit of cooling it got sticky/gluey as heck. It was like pulling taffy. Then I gave gelatin shot. Tried 1 packet, not much thickening. 2 packets, still not much thickening, 3 packets, same thing. Then I learned that high salt environments prevent gelatin from gelling. So I went to the Asian grocer and picked up some agar agar. I may still play around with the recipe a little more, but at the moment, I'm pretty pleased. Carageenan (aka Irish Moss) might be an option for a clear thickener, as is Acacia gum. Pectin could prove interesting as well.

          I dunno, the agar agar thing looks a little creepy to me. I've never been a gelatinous food fan.

              lawyer agar agar has a denser texture than jello it is almost crunchy it slices and cubes it is not bouncy really ....try it !!!it is fun to use pretty full proof and you can really make great healthy desserts with it
              I promise ..wait until I do a chocolate one tomorrow!!!

                          lemon grass is ..well a grass that tastes like lemon ..it is used a lot in Thai and Vietnamese cooking, it is really fragrant ...I like it in drinks and desserts as well

                          you can grow it or buy it in most Southeast Asian markets. I take a wine bottle or something and smash or bruise it for this so the flavor is released and then use the grass to stirr the pot ...It is in the picture above let me get it and show you

                            ok it is on the way right in this picture

                            when I buy it I always like to put one in a jar of water to root ...then put it in the garden when it warms up ..we are too cold here in the winter so it is an annual but it is a really nice house plant as well
