  • Ricotta Salata

    OK, this is not to be confused with the soft ricotta cheese used for Lasagna. This is a firm, tangy, salty aged cheese. I bought a HUGE hunk of it, and um, I'm all out of ideas. Anyone know a good way to serve/eat this stuff?

    Hubby and I snacked on it with olives, but what else would be good?

    Use it in salad, like you would Feta or Blue Cheese.

    You can use it in quiche or maybe even as part of a stuffing mixture for pork or chicken.

    Here's something interesting. The ricotta is grilled. If you try it let us know!

        Here ricotta salata is often used just grated on pasta. Often pasta with eggplant, capers and sundried tomatoes... I think it's Sicilian
