Ok I am sick of trying to find a "perfect" knife ...I keep killing them...can you tell me about your favorite? I have to go and buy one...soon I am desperate here.....I love a small french type with narrow tip ..sturdy and prefer stainless but can sharpen if I have to .....does that make sense??...help?????

I have a set of Wüsthof knives - they are one of the best. Another great one is Henckels (or J.A. Henckels.)
I have the classic set that looks like this, but there are two other lines as well. These knives are just amazing. You can sharpen them yourself or if you want you can take them to a professional every 6 months or so - depending on use. I usually just sharpen my own - the set I have comes with a sharpening rod.

My son is a chef and he loves Wusthof..that is exactly the size/shape I like Dave!...I have not found one here and will check it out online...he (my son) said when "You make up your mind I can get them at cost" so I will show him the picture and see if he can get one because he had no idea what I was saying...but he is my son and we speak a different language!...but the last Wusthof I had the tip bent in the first week!...it is wonderful in the hand..I am so darn hard on knives.....I should see if Henckal has one the same shape....there is another German Knife I heard that is wonderful too and can not remember the name I was hoping someone would know??...cooking is so fun when you have the right tools!!!....I do find shopping in Canada for Kitchen stuff to be far better ..I bought a cast iron grill for the stovetop for $8 Canadian here they are $30!...and I found a retractable sink strainer that hangs on the edge of the sink...and the best cleaver I have ever used!!! but I digress

My understanding is that Wusthof and Henckel are made by the same manufacturer, but different lines. I always liked Wustof because they were good quality but a LOT cheaper than Henckel. Now I own a set of Global knives that I like even better. The knife is one piece so I don't have to worry about rivets coming loose in the handle. I use my knives a lot, have had this set for nearly 4 years now and am just getting ready to sharpen them for the first time.

I LOVE my ceramic knives. I got them for christmas last year and use them daily. They stay amazingly sharp for years. They are actually sharper than the knives I used when I worked at the resteraunt. I just have to make sure I don't drop them or do anything that puts torque on them like boning or frenching ribs.M 35 5'-5"

I've always wanted to get ceramic knives, but I've been worried about ruining them. I'm actually quite careful with my knives, perhaps when the money flows more freely again around here I may invest in one and see how it goes.208/181/175/140

I love my cutco knives (not available in stores, they were bought from a salesperson)
They were TRES expensive ($1500 CAN for a 16pc set) but they can be bought individually.
They have a forever guarantee (meaning their guarantee is longer than your lifetime)
The handles are made of bowling ball material and come in black or white. I have never seen a knife perform like these, and yes, you CAN shave your legs with them if you really wanted too LOL.
AND they can go in the dishwasher too
