omg you guys while I was in BC this weekend I tasted a new dish
and with a little sweet talk the chef gave me the recipe...it was to die for ....and pretty simple!
for two hens ..cut them in half and soak in salted water while you prepare the following marinade....
3 tble hot red chile powder
1/4 cup fresh squeezed lemon juice
1/4 cup oil
4 fat cloves of garlic smashed
2 tble sweet red paprika
1 tsp kosher salt
1 tbl dried oregano
mix well put hens in a ziploc and marinate over night...then remove from marinade pat dry and deep fry in hot oil until crispy brown and done all the way through
serve with a nice fresh cucumber/tomato salad
yogurt or sour cream and some coconut chutney..I will post the recipe when I figure it out
I know it had ground up coconut, lime, jalepeno, salt and something else ....
