  • Cauliflower "mashed potatoes"

    I found this recipe on the back of the carb selects Mayo. I'm getting ready to try it! Does anyone know if its any good, or know something they added to make it even better? :yes

      Steamed cauliflower, water, Mayo(I use the carb selects mayo), butter, salt. Just cook the cauliflower like you'd do potatoes. Then mix the with the mixer, add water, mayo and butter to taste. I just made it, its actually pretty darned good. Doesn't taste like potatoes too much, but I liked it. I added a bit of parmesan cheese to make it a bit less runny, but I think I just added to much mayo. But the cheese did the trick, it smelled, but tasted great!

        This is almost the same as the standard "faux mashed potatoes" many of us use. I can't imagine why they're having you add water to the cooked cauliflower!!! Omit that step and you should have much better luck. I make this quite often -- but use cream cheese and a bit of sour cream in place of the mayo (but I may try the mayo!) and I also like to add a bit of garlic, chives and crumbled bacon. Then I put some grated cheddar on top, bake it in the oven until the cheese is melted. Mmmmmmmm!

        Now I'm hungry!

          Yes, just a standard mashed cauliflower recipe that inserts mayo instead of cream cheese or cream.

          I like mine with heavy cream and butter, plus bacon crumbles, chives, salt, and pepper. Definately no additional water should be needed, cauliflower can be quite watery on its own when cooked.
