    Okay, guys, the supermarket had a great sale on canned salmon last week and I bought a bunch of it, not knowing quite what to do with it... Doing a search, I found this great recipe for Salmon Loaf:

    Cheesy Salmon Loaf


    1 can salmon
    1 egg -- beaten
    1/2 cup heavy cream
    1/2 teaspoon salt
    1/2 teaspoon pepper
    2 tablespoons melted butter
    1 tablespoon lemon juice
    1 1/2 cup shredded cheese

    Combine all ingredients and put into greased breadpan. Bake at 350 F for 30
    minutes.



    I'm going to make this for dinner tonight. My questions is: anybody have any other way they like to prepare canned salmon? I feel like trying new recipes! Thanks.

    I use a similar recipe to the one you posted---except I don't add the cream,the cheese, the lemon juice or melted butter. Instead I add herbs like parsley or tarragon or dill ans some finely chopped onion. I form them into patties, plop them into a muffin tin pan, and bake them.

    The other thing I do is make a salmon "pate". Basically, remove the bones and skin from 2 cans of salmon, mash it up, but not too fine because you want some chunkiness. Add some mayonnaise, alittle chopped onion, a couple of tablespoons of lemon juice, and lots of chopped fresh dill. Mix it together. Then take a packet of unflavored gelatin, sprinkle it over about 2 tablespoons cold water. Let it sit for about 5 minutes. Then bring 1 1/2 cups water to a boil. Remove from the heat and add the gelatin to it, stirring thoroughly until the gelatin is completely dissolved. Mix it together with the fish mixture. Then put it into a loaf pan. Refrigerate until firm, then slice and serve on lettuce.
