    Megs have we posted a thread about Piri Piri? I can not remember!!!
    oh well I am in the throws of making mine perfect now..I have a huge party coming up again in April so I am going to get busy and make a few kinds of Piri Piri


    this is the best hot sauce...depending on the pepper you choose to use you can make it as mild or as hot as you like ...I like it HOT HOT HOT .. I choose habeneros for mine frequently...

    the color of the pepper is the color of the sauces so choose nice colors....
    This hot sauce is Portuguese to begin with ..then spread out to everywhere, I see this sauce a lot when I eat food from Mozambique or Angola....the deep fried Cornish Hen I had was served with this hot sauce on the side..
    ..it is also seen a lot in food from Brazil...there was a version when I visited Hawaii and where I grew up in Rhode Island..all Portuguese influenced places ...

    and so this hot sauce recipe is very close to the one I used to buy from coworkers and street vendors ..when I lived in Panama..a version very similar to this hot sauce is found actually from my experience through out the Caribbean ...



    Piri Piri

    1 cup olive oil
    3 tablespoons dried red chiles such as chile piquin, Thai bird chles or any red chile you like mild or hot dried habeneros give it more of an "island" flavor I think but really hot
    1/2 tablespoon sweet red paprika
    3 cloves fresh garlic, minced
    2 teaspoons kosher salt
    1 tsp dried thyme
    3 allspice berries cracked


    put everything into an air tight jar shake it up then store for two weeks in the frig...after that before serviing put in blender and grind it up...careful getting this on your skin !!!

    Yield: 1 1/4 cups

    Oh my gosh, no wonder your such a skinny thang!! Eating stuff like that melted the pounds off of you!!

      first of all come here so I can kiss you for saying I am "a skinny thang" OOOXXXX

      ...second I did read someplace that hot food can crank up the fat burn
      so I have been a religious follower of that thought since then ..ok all my life I have searched for the perfect heat

        Hot food cranks up the fat burn eh? Is that possibly because you're runnind around in tears? JK! This sounds great! I can't wait to try it.

            I love hot pepper concoctions! I make my own pepper vinegar by taking alot of fresh hot peppers, a clove or two of garlic, salt and little black pepper, stuffing them into a clean jar, then pouring in enough boiling hot vinegar to cover the peppers. Put the lid on the jar and let it "age" for a few weeks. Then I dump the contents into a blender, puree it, and I have my own hot pepper paste/sauce.

                when I lived in Panama or with my folks in the Caribbean I noticed families all had thier own hot sauce recipes ..some had a bit of mango or more allspice or even curry in the background ....I love trying hot sauces when I travel..now I hate the ones that are just made with capiscum extract ..that is gross ..but local home made hot sauces with real chiles ...

                  I worked with a guy from Thailand once who used to do something similar with the vinegar and whole peppers. But, he used to eat the pickled peppers with his lunch sandwich---just like you would a dill pickle.

                    I love when I go to Grand Cayman on the beach you can find this guy frying whole Caribbean snappers and dumping pickled hot pepper vegetables...


                    the heat was so hot my lips would tingle all day ..I love that stuff ..I hope the hurricane did not blow him a way ...he was a shack a pot of oil and a propane burner ...endless supply of fresh fish ...and hot peppers

                    I am day dreaming !!!!!

                    I need to go eat lunch ...NOW ..(.I am painting today ..the last touch ups of my husbands office ...whooooo hooooo......)

                      oh man and to think I gave up hot peppers for lent grrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrr

                      yep humans get a thremogesic effect from the chemicals in the peppers which is why you see folk sweating after they eat them. it increases the metabolism and burns a few more cals for you.

                        well I gave the f bomb up and that lasted a min or two....so the food bank wins!!!

                        save this for when you are done with lent! peppers come in later in the summer anyway

                          bumping piri piri for my "Tired" friend

                          here you go baby girl

                          this is a tried and true recipe I keep it on hand and dump it on everything

                          Piri Piri

                              Dot it is a great one this one it goes on anything!!!! and it is so easy to tweek!!! whatever you want just toss it in ...I combine all kinds of peppers in there when I find them ..dry ground up ones to fresh ones ..but this recipe is a good one to start with and it is my stand by that is for sure
