Becca, hope you don't mind me jumping in here...but wanted to add to your thread instead of starting a new one.
Here is my dinner from tonight. I had two leftover chicken breasts from the other night. I shredded the meat and made poor mans crab cakes from Linda's Low Carb http://users3.ev1.net/~fontlady/poor...rab_cakes.html
I made a couple alterations on the recipe because I didn't have all the ingredients I used dried cilantro and parsley (no fresh) and no green onions. AND I used bacon grease to fry in. The dipping sauce was ranch dressing with some raspberry balsamic vinegar for flavor and avacado on the side.

Valid Rose I just noticed your post...Of course I don't mind I hoped everyone would post some great food pics....ANd yours looks awesome...did it taste great??? I love Linda's low carb recipe site...some really great things...I have tried the coconut chicken patties which are great and look similar to the ones you made...
That meal turned out great...HOWEVER they do NOT turn out great as leftovers the next day...ewwwwwwwwwwww. So, if you make them, be sure to eat them right away.

Well No I don't have a webpage...maybe I can get DH to help me create one... Most of the meal I make are others recipes but I really love to cook and if I could figure out how to run a webpage maybe others would find encouragement in something I had to say...you think?? I don't feel very inspirational, only 1 gal that keep trying and kept restarting and reatsrting after blowing it until it stuck.....and ATkins is the key
