  • SCOTTT!!!! I need help with my mandolyne..anyone????

    I bought a mandolyne and can not figure out how to use it as well as I know it should be used...everything I am cutting so far looks like crap...if you are out there and here me ..please come ...and advise???..any tips ?????

    anyone have and use a mandolyne ..I realize they take some practice but I am already bleeding all over the place

    help!!!

    Bandage those fingers ASAP!!!!

    What kind of mandoline did you get? Is it the kind that stands on a slant or the kind that doesn't have legs and you need to set flat over a bowl or some kind of receptacle?

    Anyhow, you need a somewhat light touch: if you press down too hard, the blades will take a bigger bite of the food and the food might snag and the slices will be uneven.

      OMG Megs thanks so much for saving me here!!! you should see the directions and even the pics ..the chef is cute but I can not tell what the helll he is doing my fingers are still intact but have a few bandaids now...

      this is the one I have ...help!!!!

        It's hard to tell from the pic, but does your have the finger-saver thingy that encloses the food or do you plop the finger-saver on top of the food to hold it while you slice?

          Heidi, mandolines haven't been that popular in the kitchens I've worked in and although I've given some consideration to owning one myself, I have yet to take the plunge. From a hands on perspective, you have more knowledge than I do.

          That being said, I was able to pick up some good information on mandolines from my chef resources. The bottom line? They don't like them all that much. Expensive mandolines get very mixed reviews. They're hard to clean, take time to set up, involve a learning curve (as you've experienced) and the blades have a tendency to dull over time. The much cheaper, much easier to use Japanese Benriner brand slicers are much more popular. They come with a variety of blades and can be found very cheaply in Asian grocers. Their only shortcoming is that they dont do waffle cuts.

          Do you still have the packaging/receipt? I would take it back if you still can.

          If that's not an option, I think you can, with a little time, master your equipment.

          The mandoline came with an instruction manual, correct? I'd read through it a few times.

          The consensus of the people that I've come across is that the guide/hand protector produces inconsistent results. It's better to carefully use your hand to slice the veggie up to a certain point, then use a towel beyond that, and, once you get pretty close to the blade, disposing of the last chunk in garbage or set it aside for making stock.

          Be patient. Be painfully sloooooow. Be respectful of the blade. After you've used it successfully a few times, you can bump up your speed a bit.

          Regardless of which mandoline you end up with, if you want to guarantee happy hands, I'd suggest something like this:

            I think the bottom line is as you said ...I need to slow down I was using it like a grater!!!

            I will figure it out I am determined


            Megs I plop the finger saving thingie on the food and push it...actually I cut myself when I figured out how to reverse the reversable blade that thing was sharp as hellll

              I bought a pile of veggies and plan to practice this thing tomorrow ....
              I like it ..I just wish I had someone to show me how to use it ....I have crinkle cutting down and microthin slicing down pat with it and I like how it works so far.....but I can not figure out how to do the jullianne

              I am going to use it today to make fresh fennel salad with lemon juice olive oil and fresh micro thin sliced parmesan

              but tomorrow I will have matchsticks if it takes me all day....

                  I have one, and I hate it! My mother-in-law gave me one from Pampered Chef, and its so hard to use. You have to cut the food to a small akward size to get it to fit into the holder. You can't even fit half a lemon in the dumb thing. It's easier to me to use a really sharp knife.

                    this one is huge and it holds an entire fuji apple!!! it has very sharp blades and handling it is good it sits firm on the counter and is easy to clean....it is just figuring out what blades to use and how to set it that is giving me fits....
