Spring Cooking Challenge Guys Come One!!!

    I got some farm fresh eggs from a friend and made a very nice breakfast. Four of the eggs were broken in a bowl and mixed with heavy cream. I put in a few spoonfuls of psyllium husk and pork rind flour, beat it about, then added a bit of vanilla whey protein powder to adjust the consistency to a nice thick batter.

    Serve with Splenda sweetened whipped cream and a few slices of strawberry if you're on the berry rung. Tasty,

      OK, I got the Chayote squash! Drat! Forgot the LC tortillas!! Hmm, what else can I do with them??

        On the fried cheesecake thing, I could easily see a Splenda sweetened egg based batter with some similarities to the psyllium pancake recipe. I would suggest whipping the egg whites separately with a pinch of cream of tartar, then beating the yolks and sifting in some wheat protein isolate, guar gum/thickener or psyllium husk, vanilla whey protein powder, possibly some finely ground almond flour, and coming up with a very good cheesecake frying "cake" batter.

          The cannoli thing is way too easy to low carb. Any almond flour based cookie recipe will make the shell; bake them in rectangles or triangles and fold over while still warm. The ricotta filling can be made with Splenda, or substitute a nice egg yolk and cream based custard filling.

              Here is a thread on chayote. The mock apples are great, served with pork is awesome. After you cook them the first time, I'm sure you'll come up with a lot of ideas.

              They are called MIRLITONS by the creole.

              Google chayote squash and you'll get tons of stuff.

                Oh, thanks Joy! That shrimp & ham stuffed sounds awesome! If I like the Chayote, that is LOL. Think I'll try the "apples" first and see how that goes!
                Thanks again for the links! I did search a bunch of recipe sites that I have but nothing looked that good!! Yummm.

                    So the new Super Walmart opened just around the corner from me today...and of course, I had to go check it out (Sorry, Heidi).

                    Let me tell you the goodies I found in this store:
                    1) Soy flour
                    2) Davinci vanilla sugar free syrup
                    3) Mission Carb Balance tortillas. These little babies have 18 g of carb with 11 g of fiber!! WOOHOO
                    4) Blue Bunny Carb Freedom Yogurt much better than the dannon stuff!
