Well, I just went and made my first low carb soup. I took a recipe from this board and one on Linda's Low Carb and what I had in the pantry and made New England Clam Chowder. Oh my gosh was it good.
I don't always measure...especially when I'm using ingredients that I know are 'legal'. I'm on OWL at the berry rung. I know, I should be measuring EVERYTHING, but I do tend to 'eyeball' alot.
Here's what I did:
Chopped bacon, probably about 3 full strips thick slice.
about 1/2 cup chopped sweet onion (the one they grow with the strawberries.mmmm)
2 stalks celery
Sauteed that all together until the vegetables were tender
Added about 2 cups of chopped cauliflower
Added one can of clams and juice
Added 3 cans of water
Added about 1/2 tbspn of old bay seasoning
dash of black pepper
Boiled until the cauliflower was tender
Stirred in about 1/4 cup cream
Now, I'm imagining all sorts of things I could use this for...cream of chicken, cream of portabello mushroom, cream of cabbage, cream of cauliflower, ****, just cream of <insert veggie name>
