  • Question about lowcarbrecipes.org

First, I'm curious, are the recipes here reviewed/validated by mods to verify that they are indeed low-carb and all ingredients are allowed? Where would I go to make a suggest/request for a Yes/No flag to indicate INDUCTION LEGAL on a recipe? I think that would be VERY helpful.

That said, I have a question about a specific recipe that looks like it could be "too good to be true" if it's legal. Details below. Is this induction legal? What is Wheat Protein Isolate? What is stevia? Are these allowed on induction? Other rungs? If allowed, where can I get them?

Recipe Name: Tortillas, taco, waffle cones, chips, wraps

    Submitted By: fullhearted
    On: Aug-07-04 12:44 PM

    Serves: 4-6
Calories: Add what you put in
    Prep Time: 10 min.
    Occasion: Any
    Effort: Easy

    Ingredients:
30g Wheat Protein Isolate*15g Soy Flour*15g Flax Meal*1/2 tsp baking powder*1/4 tsp salt*1/2 tsp Stevia (more for waffles)
Female / Currently on Extended Induction (again), begun 6/2/08.

I did Extended Induction from 1/3 to 5/9 (2006) and lost 55 pounds, so I know I can do it again!

no, the recipes are not checked. These are member contributed. It is even possible for risque comments to get posted and we will not notice until someone alerts us.

I can't find the recipe you mean, which section is it? The whey protein isolate is fine, when you see isolate it means they 'isolated' the protein out of the product, it is pretty much all protein and close to carb free. Flax is very low carb. Stevia is an herb, most formulations are carb free.

Soy flour is not carb free. The carb count isn't huge, but significant. Soy powder on the other hand would be okay, it would be the soy protein isolate, but soy powder and soy flour are not the same thing.

Again, the recipe wasn't under breads, where can I find it?

Is soy flour induction legal in small quantities, or should this just be avoided for now? Is soy protein a viable substitution (will it give the same properties to the finished product?) I am just now beginning my experimentation, so this is all new to me. The recipe I mentioned above is in the "Other Recipes" section. It's recipe ID is 2259 if that helps.

Wheat Protein Isolate sounds very interesting, where could I purchase something like this? I know they didn't have it at my local Whole Foods, and my first (quick) search online didn't turn up anywhere to buy it. Thanks for your help.

          carb count for soy flour

11 grams of carbohydrate in a 30 gram (1/3 cup) serving; 5 of those grams are fiber.

so halve that for the 15 grams.

Soy flour would not be induction legal, I use soy protein and have used soy flour in the past. Soy protein in my opinion is much milder in flavor, the texture is different, but in my opinion with the soy being only a 1/4 of the recipe, it probably won't make enough difference to be worth worrying about.

Protein isolates will be in health foods stores, and the health food sections of larger drug stores. Look for large canisters, possibly near other foods catering to body builders.

this is my recipe for tortillas, I may experiment later with using flax with the powder.

www.locarber.com sells it (out of NY State, I think).

www.low-carbing.com (out of Ontario, Eastern Canada)
www.lowcarbcanada.com (out of BC, Western Canada)

There's a great heap of excellent info on baking with Wheat Protein Isolate right here in the ADBB, written up by Naja and with a selection of recipes, too. It's at http://www.atkinsdietbulletinboard.c...ic.php?t=23139, "Low Carb Cooking Lessons > Baking with Wheat Protein Isolate (WPI) Low Carb Flour". I highly recommend it.
