    it is good to keep on top of this you know

    eggplant parmesan (Proviidence style) ...and leftover fennel salad

    Fennel salad? what do you put in it, besides fennel? And what is Providence style eggplant parm?

    If I get a chance to go to Whole Foods, I'll trade in my first born for some Wild Caught Salmon, otherwise, I think we'll be having chicken.

      Pork chops, broad beans and brussel sprouts.

      (heidi, is there anything I can do very quickly with some curry powder, to make the pork chops a little different!)?

      I emphasie the word QUICKLY though.....

      I have since re-gained a bit of weight, but that is soon to be coming off again!

        I make this salad in memory of Julia Child ...my idol

        nice fresh fennel sliced as thin as possible
        the best parm you can affored sliced as thin as the fennel
        good Spanish olive oil
        juice of fresh fragrant lemon
        kosher salt
        rough cracked pepper

        you layer all these things ..together ..with a gentle hand so you do not break up the parm...let it sit ...

        I like it as soon as it is made.....hours after and a day after it is all good so I make a lot!!!

          yes baby! you can take some lemon juice olive oil the curry spice and toss the chops in a zippy bag....you can leave it even 24 hours like this then when you are ready grill or broil them ..simple ..serve with your veggies tossed with lemon juice and cillantro hot chile if you like ...and yogurt or sour cream on the side for dipping

              if you can eat mangos I love to have them tossed in lime juice with chile and cillantro as a side to curry anything...omg I think you wound me up here!!!

                when you get home slice a little of each the fennel and the ricotta salata close your eyes and taste them together ...you will know and Julia would be proud if it worked!!!

                  I'm lazy today since its cold and rainy I want something easy. I believe we'll be having tacos with some of the homemade salsa I jarred during the summer. Yum.

                    Thats what I am going to do tonight then, for tomorrow night. I will knock a marinade of Olive oil, lemon juice and curry powder and leave a couple of pork chops marinading in it in a small sandwich bag over night.

                    How does that sound?

                    Ready for frying tomorow evening.

                      MoG, if you want something easy, just "do a" me. take some pork chops and cook them, whilst prepraring some quick and easy vegetables.

                        LOL Rich, unlike you I cannot have the same type of protein 2 nights in a row! We had pork roast and sauerkraut last nite so pork chops are out for tonite! John won't eat brussel sprouts or beans BTW! So that would be more work for me because I'd have to fix him something different!

                              I havent got any of those "zippable" bags. I will just use a normal clear small bag and fold the ends over.
