  • Stevia?

    I found a book yesterday that had a TON of low carb recipes. And they sounded sooooo good. But everything called for SteviaPlus and Sucralose. I thought stevia was the same as splenda, but that would be sucralose(right?) SO what the heck is steviaPlus and where can I find it?

    Stevia is an herbal non-caloric non-carb sweetener. It can have a biting acrid taste when used solo, but it works quite well in blends with other sweeteners in synergy.

    I don't know about that particular brand, but many health/natural food stores carry Stevia.

      The brand/form of stevia you buy makes a huge difference. Powdered seems to have less aftertaste than liquid extract. Even when buying powdered, there are many brands that are pretty vile, even when combined with splenda.

      SteviaPlus is a brand name of powdered stevia. From the people I've spoken to, it taste's better than most but I think there are better brands out there.

      Even with the synergistic boost you get, if the Stevia tastes really bad, it will still taste bad using smaller amounts.

        I tried it and

        I found it worse than Splenda ...disapointing considering the cost of the stuff ...it is so expensive!....I gave it to a friend that does not seem to be thrilled with it either but she will use it and I couldn't it was awful in coffee and I guess it is the after taste although I can not put my finger on it .....it is a strange sweet to me....I have not tried the liquid but if the powder is better then I will not waste my money.....it is a shame there is not a good artificial sweetener I did like cyclamate years ago but forgot to buy some one my last trip to Canada!....I just bagged the sweeteners all together and deal with food with out it...honestly I still miss sweets but the trade off is this picture I found in National Geographic of an MRI of an obese woman it is a motivator for me to avoid sugar that is for sure!!!

          Look for the SeetLeaf brand of Stevia. It seems to be about the best on the market. I use it and love it, but have had to throw out other brands.

          I use the pure extract powder for sweetening iced tea by the pitcher (about 1/3 teaspoon does two quarts!) and the liquid extract for by the glass. If used in moderation, it does NOT have a bad aftertaste.

            Stevia Is Great!

            I cannot eat sugar and have tried stevia in a few desserts and it's great. Not all stevias are created equal. They all have different tastes, depending on the brand and the form you buy. I have tried a few brands and the one brand that my taste bubs really love is the KAL brand stevia. Has a wonderful "honey-like" flavor, or aftertaste, and is smooth. Love the stuff. I have about 4 cookbooks that use nothing but stevia in the recipes and they're great. Stevia is a miracle to a family of diabetics.

              I mentioned in another thread that i had a reecipe that called for 1.5 sf syrup. can anyone tell me how to cut that with stevia--- how much stevia to how much syrup?

                No, because the sweetness of the SF syrup and the strength of the stevia will vary depending on what brand you are using.

                I'd refer back to sugar as the measuring point. In the recipe that calls for 1.5 cups sf syrup, how much sugar is that supposed to replace? The directions on the brand of stevia you purchase will tell you how much sugar that is supposed to replace.

                The brand of stevia I use is extremely concentrated - one tiny pinch will sweeten an entire cup of coffee. So I'd start with maybe 2 tsp of that brand to replace 1.5 cups sf syrup. But other brands of stevia are less concentrated, so they might not work the same way.

                  Do u know whether there is any carb in stevia tea? The only ingredient is dried stevia leaves..no fillers?

                    stevia is completely non caloric, so no carbs. Zip, nada, none.
