here you go my favorite all around marinade for the grill
Cuban Mojo
with a twist
6 cloves of garlic
1 inch fresh ginger
2 habanero peppers
1 bunch fresh cillantro
1/2 cup sour orange juice or key lime
1/2 cup olive oil
1 shot good dark rum (optional but good )
1 tbl smashed cumin seeds (toast them for a second in a hot pan to release the aroma)
2 tbl madras curry powder
kosher salt and fresh cracked pepper to taste
put all of this into the food processor or blender and puree until smooth
this marinade is wonderful on wings just put them in a ziploc bag and let them sit overnight in the fridge ...mush them around when you think of it....then grill slowly until crispy and golden...
chicken and pork are the best I think with this marinade ...I imagine you could do prawns or squid this way...I will test it and report back
take Large peeled and devined shrimp (leave the tail on.)
Throw them in a bowl with lots of chopped garlic and basil
Let them marinade for at least an hour.
Wrap them in bacon and put them on skewers and grill! Easy peasy!
