Porcini mushroom carb count?

  • Porcini mushroom carb count?

    I have carb counts for generic "mushrooms", but does anyone know the REAL carb count of porcini mushrooms, specifically those rehydrated from dry? They are FAR too flavorful not to have more carbs than those regular white ones, and I don't trust the generic counts.

    On a related note, does anyone have a great ONLINE place for nutritional info (for things that fitday.com doesn't have)? Thanks in advance.

    fiber 6

        Whoa... wait....

        Do you really think they have 0 net carbs? 6-6 made me do a double take! lol

        Maybe because they're dried? Wow, I hate to bet on that, I LOVE those things, and if I'm wrong I could really mess up my intake.

        Thanks so much again for taking the time to look at your package and post that for me.

        Edit: Come to think of it, 35 calories can't possibly come from just 2g of protein, so something seems amiss in those counts. That's about what I've found when I have found other listings for dried porcini mushrooms -- the numbers just don't add up. Ah, the mysteries of mushrooms.

          Dried mushrooms have a higher carb count by weight than fresh, but dried porcini and dried white mushrooms should not have an appreciably different carb count.

          1/2 cup of fresh mushrooms is mostly water and has a low carb count. 1/2 cup of dried mushrooms would be equal to several cups of fresh mushrooms, and consequently would have a higher carb count.

            Sure, I totally get that, it only makes sense. It's just surprising to me that I haven't been able to find nutritional information for them specifically. I'm sure it's fine, especially if everyone here says so, since you are obviously experts at this! I just use them quite often, especially for the broth they make when they are reconstituted, so sometimes I get nervous that I'm working with the unknown. It also baffles me that every time I do find what appears to be nutritional information for them, the numbers just don't add up. Yes, I'm sweating the details. :nod

              total cal (TC) = fat + carb + protein

              TC = 0 + (6 x4) + (2 x 4) = 24 + 8 = 32

              Hidden carb = TC - Calculated cal

              The difference is 3.

              Not too bad, imo.

                True.

                I guess what's confusing me is the fiber. If Fiber is defined that it goes from mouth to the other end unaltered and undigested, how does it contribute to calories? See what I mean? Or am I just missing the boat entirely? lol
