    what is it?

    Okay i was out of Stevia and wanting to avoid the carbs in the sweetner packets I tried using my chocolate whey PP as the coco part of the cream cheese blobs. I got a stretchy stuff looking a lot like taffy but having a softer mouth feel like nuggat. the taste was terrible but i was wondering if it was the PP addatives or the PP that made the alterations. it has some cellulose and xanthum gum in it. If it was the gums i can make taffy with the regular blobs as they taste much better.

    Although I haven't a clue how it happened, the stretchy stuff sounds like casien (aka elmers glue). Could your blobs have separated? Acid, salt and heat will all precipitate dairy.

    Although cream cheese seems to be one of the most stable cheeses I've come across. I don't know.

      Dunno. My whey protein powder does not do that when I mix it with cream cheese. But individual formulations may vary, and your powder might have something in it that causes the clumping.
