  • Calling All Creative Chefs, Get Me Through Friday!

    Due to a variety of factors including going off plan for my cleanse, going away, and eating out lots while company was here, I have very little food in my house. Combined with the fact that it's the end of the month and bills come first, I can't go grocery shopping until Friday.

    So here's the challenge, help me figure out what the **** I'm going to eat, given the stuff on my fridge and shelves, until I can go shopping on Friday (payday). I may be able to eat out once or twice, but I'd rather not.

    Here are the limitations:
    I hate eggs, so omelettes are probably out (I'll generally only eat them with mushrooms anyway).
    As you're about to see, I literally have no meat.

    Here's the list:

    --Infinate amount of frozen green beans (literally infinate, about 8 bags worth)
    --salsa
    --low carb peanut butter
    --2 tab energy drinks
    --1 package of bacon
    --1 bag of cheddar cheese
    --4 eggs
    --1 bag of mozarella cheese
    --1/2 pound of American cheese
    --a jar of pesto sauce
    --a number of different flavours of ranch dressings
    --2 Tab energy drinks
    --1 bottle of low-ish carb tomato sauce
    --1 meatless hamburger (like Boca Burger, but more expensive)
    --mayo
    --1 chocolate flavoured low carb "Crunch" bar

    I also have a variety of baking stuff, splenda, stevia, almond flour, Atkins Bake mix, etc. If you think that'll help. I don't.

    Well...I hope someone has some suggestions! I see a lot of green beans in my future.

    Click the link in my siggy. That will bring you to my website. Click the link called "My Recipes": there's a recipe in there for faux split pea soup, using green beans.

    You could also use that low carb pizza recipe on the board and make a cheese pizza with the ingredients you have.

    If you had more vegetables, this would be alot easier.....

      Have you ever had one of those Bisquick Ultimate pies? I'm thinking of a low-carb hamburger pie.

      crumble up the meatless hamburger, stretch it with some mix-ins, and top it with a low-carb bake mix biscuit top (which probably requires eggs) ...

      Mexican version --stretch with salsa and cheddar cheese
      Italian version -- stretch with mozzarella, tomato sauce, a little pesto
      'merican version --stretch with green beans, cheddar cheese, and a little bacon

        I told you guys it wasn't going to be easy, but thanks so much for your suggestions! I'm going to move that hamburger tonight.

          well, what about a quiche? bacon egg and cheese quiche?? I made green beans with cheddar chese a while back from a recipe I found in our forum here, it was excellent...

            Try the deep fried green beans, they are yummy!

                Genius ideas, guys. Tonight I'm going to go with some baked green beans, and maybe try out a quiche. Don't you need heavy cream for that, though?

                  Yes, you need heavy cream. You said you might go out to eat once or twice, if you can afford to go out to eat, you can pick up some cream it only costs about 2 bucks!
