      So, yesterday at the grocery, they had these chayote squash. I'd read this post so I bought one. I also bought some pork loin chops. I was surfing for something different to do with the pork chops and couldn't find anything. Then I thought, why not make the mock apples and cook them over the top of the pork chops.

      I made a couple tweaks:
      I added a dash of ground ginger and ground nutmeg to it. Instead of microwaving it, I ladled the mixture over the top of my porkchops and baked them.

      It was delicious! My dh said "Well babe, once again you've outdone yourself!" He had two helpings of it!

          this has always been one of my favorites and forgot about it lately until you brought it up!

          I had never thought of trying to make it appley ..but did as well the other night and it was awesome!!!!

          you guys should try it in a curry let me give you my recipe

            here are two non appley recipes
            these are the way I have cooked chayote and both are really good
            I serve both versions on top of sliced grilled chicken breasts with low carb tortillas (or lettuce leaves for wraps) , fresh chopped cilantro, sour cream and quartered limes...
            enjoy
            chayote curry

            3 chayotes, peeled and chopped into cubes
            1 large chopped onion
            3 cloves garlic smashed
            4 large tomatoes peeled and chopped
            1 tablespoon finely chopped cilantro
            3 tbl madras curry
            1 tsp cumin
            1/2 tsp coriander
            1 cup coconut milk
            1/4 cup olive oil
            1/2 -1 cup water
            salt and pepper

            Heat oil in a saucepan. Add onion, cook until golden then add garlic and spices saute a few min then add the tomatoes, then the cilantro and water and boil it down for about 5 minutes more. Add the chopped chayotes and the coconut milk more water if you need it and cook slowly for about 30 minutes until tender
            ...you can make this induction friendly by leaving out the coconut milk

            Chayote and green chile stew
            3 chayotes diced up
            1 small can tomatoes or 4 chopped seeded freshe tomatoes
            4 cloves garlic, chopped
            1/4 olive oil
            1 med onion diced
            1 cup roasted peeled chopped green chiles or if you want 1 8 oz can of green chiles chopped
            1 1/4 cups chicken or veggie stock
            1/2 teaspoon salt
            1 tbl pepper
            1 tablespoons dried oregano
            1 tsp ground cumin
            In a large heavy skillet, heat the oil over medium low heat. Saute the onion for about 2 minutes, without browning. Add the tomato garlic puree and continue cooking, stirring and scraping the bottom and corners of the pan for about 3 minutes, until thickened and reduced. Add the chayotes, water and salt. Cover the pan and cook over medium heat. After about 10 minutes, add the oregano, cumin salt and pepper cover the pan again and cook for 10 to 15 minutes more, until the chayote is softened but not watery.

                I wanted to bump this up, it is so darn good!! I sweetened this with Stevia last night, and it was sooooooo goooood! I just love this dessert. I also sliced the 'apples' very thin, and I liked it quite a bit that way. Very yummy, I must say!
                What would we do without it?

                    I made a "lasagne" with the chayote, spinache, cottage cheese, mozzarella and blue cheese...the recipe is in the main dish recipe forum that was really good.

                    I couldn't get them sliced thin enough though...so I went out and bought a mandolyne!! Next time I make it, I'll be able to slice thinner! YAY

                      Yummy, that sounds so good!! I love trying new veggies, I ate so many salads I can hardly bring myself to look at lettuce. I think that is a mistake a lot of newbies make, eating the same thing all the time. I sure learned my lesson!

                            Bumping this one because I finally ate it! It was fantastic!!!! I always used to eat an incredibly sugary cinnamon oatmeal for breakfast before I switched to this WOL
                            This was way better than all that oatmeal!
