When in atkins can you start drinking unsweetened soymilk and eat tofu? I'd rather use unsweetened soymilk in my decaf coffee than cream, as it's lower in carbs and I find cream too rich. Is it induction friendly? If not, what OWL rung can you start having it on?

Tofu is acceptable on Induction. It's the "soy cheese" mentioned in the cheese footnote. It's made from soy milk but the protein is coagulated and the majority of the carbs are eliminated during the coagulation process. Soy milk is a different story....Soy milk is made by grinding soybeans, adding water to it and straining out the larger particles. So it's a mixed carb-protein product. It's best left for the legume rung, along with soy flour and products like tempeh.~Megs~
