Im approaching the end of my jar, and thinking about making some fresh stuff. I was wondering how long is lasts. Is it like normal mayo or only last a week? Should I be concerned about uncooked vrs cooked since my 1y + 4y also have a bit on their sandwiches? Im a bestfoods/hellman freak so im hoping I can find a good one that nowhere resembles miraclewhip LOL. Thanks in advance!

great questions I actually do not keep home made mayo more than three days usually only make what I can use in a day or two ..it is better fresh ..if you do use raw eggs your healthy 4 year old should be fine... but I would not feed it to the 1 year old...he is just too young and even though I am very comfortable with raw eggs there is that slight risk to a child that young is just not worth it....
make small batches and use it up quickly to be on the safe side
under 2 and the frail elderly ...should not eat honey, peanut butter (choke hazzard and the aflatoxin) , raw eggs, or raw sprouts

the mayo you make is really not the same as Best Foods (that is my favorite over the counter brand as well!!!)
to me it is is so much better.... it is a really wonderful cold sauce rather than similar to a jar mayo

ok one more thing
home made mayo is like this amazing base to add stuff to
you can add dill and lemon for fish
chile and lime for grilled chicken
you can of course add some madras curry
for curry chicken or egg salad
you can use it for the base to 100,000.000's of salad dressings!
you are limited only by your imagination ...I love home made mayo ...time to make some now!!!! I am making Fajita salad for lunch so some lime and chile mayo is in order

I made mayo for the first time a few weeks ago. Here's what i used
Mayo
1 egg
2 tsp lemon juice
2 tsp Vinegar
1 tsp dry mustard
1tsp salt
1 cup olive oil
dash cayenne
1 packet splenda
I mixed everything but the oil and then slowly added the oil while mixing with a stick blender.
i'm going to go half and half olive and vegetable oil next time. i love olive oil but i found it to be a bit overpowering in mayo.
