OK, my real favorite is George Stella's recipe, but I ran across this easy no bake recipe and thought I'd share it in case someone wants something quick and easy!
Low Carb No-Bake Cheesecake
Ingredients:
1 package or 2 tablespoons unflavored gelatin
1 cup boiling water
16 ounces cream cheese, softened
1 teaspoon vanilla extract
1 ΒΌ teaspoon stevia liquid
Directions:
In mixing bowl, dissolve gelatin in boiling water. Add cream cheese and vanilla, and begin to beat until fluffy. Add stevia and continue mixing until very fluffy. Spoon into desert dishes and refrigerate for about 1 hour until set. Serve cold. Garnish with fruit, your favorite sauce (added carbs), or serve plain.
Per serving: 405 calories; 3 g carbs
