      Last night I made muffin pan meatloaves (a la a recipe from 30 Minute Meals w/Rachael Ray - modified of course to make it LC) and steamed broccoli with cheese sauce.

      Tonight - I have no idea! I feel like Italian, so maybe a LC version of Chicken Parmesan with sauteed zucchini and squash on the side?


      5 pounds away from a little reward - pedicure!!

        I did however change the sweeteners to
        Splenda, cyclamate, stevia combo and it was perfect!!!!

        and I added strawberries to each layer ..but otherwise did it exactly the same

          Okay, this might sound nasty, but it's a really delicious combo:

          Sauteed cabbage: thinly slice the cabbage, add some thinly sliced onion. Saute in oil over medium high heat until the cabbage and onions caramelized and really meltingly soft. Scoop that into a bowl.

          Fry two eggs in butter (I like the yolks to still be runny). Put that on top of the cabbage. Serve with crumbled bacon and a generous grating of black pepper on top. The sweetness of the cabbage compliments the saltiness and sharpness of the bacon and black pepper. The egg adds protein and the egg yolks make a nice creamy saucy type thing for the cabbage.
