I was SO excited that I found a jicama at whole foods this weekend. I peeled it last night, made thin slices and sat down to try it.............

    YUCK.

I tried the first piece plain.
Second piece I tried with salt and pepper.
So I figured Id try using it as a dipping stick. Dug some cream cheese out of the fridge. Realized about 4 pieces later that I was eating enough cream cheese to cover the taste and texture of the jicama.

Im not a sweet driven person. I love savory foods. Maybe jicamas just not for me? Ive searched the recipes and have seen the oatmeal and 'chips' and various sweet salads. The only thing that sounds remotely okay is the chips with splenda and cinnamon. One of the gals had a good sounding hashbrown casserole but its getting too hot to turn the damned oven on! I dunno what turns me off more, the texture and how it feels in my mouth or the fact that I couldnt get the taste to marry anything.

(One plus side, my BM issues resolved themselves after I ate the jicama LOL)

I was somewhat disappointed as well. although it was really nice sliced thinly with thinly sliced cucumber mixed with mayo and vinegar (I got the recipe from the Board). I would buy it again for that if I ever came across it again, but it's not easy to find so I probably won't harrass the produce manager for it.

I like it chopped up in a salad with romaine, a tiny bit of onion, lemon juice, olive oil, feta and fresh herbs.

I also like it in shrimp salad with wasabi.

I tried the jicama apples recipe and hated it. It tasted like dirt to me. Oh well, different strokes!

I'm not much of a sweets person either. But jicama is a very mild light sweetness, I like it with lime juice and chili powder--the jicama has to be chilled though. The texture is kinda like a raw potato...you don't like crunchy veggies I take.

              Re: eeeew jicama

I'm not a sweets person either. So, those recipes that attempt to make jicama into an apple substitute are unfulfilling, imo.

I posted a jicama-pepper slaw recipe in the "Side Dish" forum about a year ago
              http://www.atkinsdietbulletinboard.c...ad.php?t=12975

I recently saw a recipe for jicama salsa, that looked similar to the slaw recipe above.

Also you can make a Waldorf salad using jicama in place of the apples traditionally used.

Thanks girls! I will be digging through the recipes later tonight.

MoG, I LOVE crunchy veggies. (raw tater was my favorite lol). I like your idea of chili and lime. I have a recipe thats similar with cucumber, cilantro, lime and chili.... Im going to try it with the jicama.

Keep the suggestions coming folks! lol

I love it just with salt and lime jucie, here in mexico in this months the jicamas are very dry, and they taste awful, I buy them when they are more juicy.

I love jicama a nice crispy cold one with lime and red chile on it icey cold!!!!

however since I can not stand spaghetti squash I am totally empathetic with you not liking jicama ...

my theory is try something three times three differing ways and if you still do not like it ...

then bag it ...we do not have to like EVERYTHING!

I did not like the jicama apples either

                      Re: eeeew jicama

Ohh... I wish I could get some jicama here... I'm living up in Maine right now, so not only does fresh produce not grow here for most of the year (so freakin cold in the winter) but for those who don't know, Mainers are famous for their taste in bland, normal foods... most people up here don't like exotic foods, anything spicy, or organic. I'm an exception to that rule so I'm constantly disappointed with my choices at the supermarket. Thankfully, the groceries near me finally had some coconuts and spaghetti squash in so I had something to play with in the kitchen (first time eating spaghetti squash). I've got my eyes peeled for jicama and kohlrabi though.

At least DH's herb window garden is growing well. Looks like the borage and basil are going to be successful. Rest of it hasn't sprung up yet.

                              Here's my husband lovelies:

In this planter, the one in the middle is purple basil, which has just popped up in the last couple days. The two on either side are sweet basil.

In this other planter, the one on the left hasn't sprouted up yet (it's going to be Nasturtium), the middle one is our borage (and it's going like wildfire!), and on the right are our chives. You can see the leftmost sweet basil of the first picture in this shot too.

And those are our little growlings! Hope you enjoy, Heidi!
