    Anyone have any special meals planned for the weekend?

    At this point, no. However, I'm planning to go to the wharf and look for different fish and seafood.

      I love seafood. I wish I could get John more interested in it! I can get him to eat the bacon wrapped shrimp with garlic basil marinade...maybe I'll fix that one night this weekend. I'll have to see if shrimp is on sale anywhere though.

        I'm going to make some dinners for the freezer - a cheeseburger quiche and another recipe (I never noticed what it's called) made with ground beef, shredded cabbage, tomatoes and cheddar cheese - sounds simple but tastes devine. I like to have stuff handy in the freezer and you can't buy low carb frozen dinners so I make my own. Tonight is wings night. Hmmm. No, nothing special but now that you mention it, maybe I will. We have some shrimp in the freezer. I also want to look for a chayote squash. I've never heard of it but it looks familiar. And I must buy a daikon. I've been without for 2 weeks and I'm missing it terribly.

          I love to fix stuff ahead and freeze it too LiR! But its getting too hot now to spend much time in the kitchen or I'll have to turn the air on. We're trying to conserve a little..our electric bill can get out of hand pretty quick here in the summer.

          John doesn't like chicken wings, he says they're too much work for the amount of meat you get off of them! I always get wings when he gets pizza so I can get my fix! I love 'em!

            It's not going to get too hot here for a while. I was thinking we wouldn't be in the mood for casserole type things in the summer, but I think I'll continue to make them anyway. For the nights when it's too rainy to bbq or we don't have anything good to bbq. If I do them in the right container then I can nuke them instead of turning on the oven. So how do you make the shrimps & bacon? BBQ them? Can you broil them (since it's supposed to rain this weekend). I have shrimp and bacon. The family loves both - maybe I should try that for tomorrow night.

              I guess you could broil them...I know you can do them on the George Foreman grill, I did that in a pinch once.

              I just take the shrimp and peel and devine them (I leave the tail on but you don't have to)
              Put the shrimp in a bowl and add a generous amount of chopped garlic and basil and stir it all up. Cover it and refridgerate it from 30 minutes to a couple of hours.

              In the meantime I partially precook the bacon in the microwave, just enough to get some of the grease out.

              Cool the bacon, then wrap it around each shrimp and skewer them, then grill them until they're done. They are really easy but really yummy.

                  Wow wings sound great the kids are having toms farm pizza on saterday how can I find low carb wings I looked in the store and the only ones I could find had 9 carbs for four thats way to much I want to eat at least 8

                    Well I am back for a day then off for another week!!...

                    but really wanted to say hi to my friends ...snoop and see what's cooking??

                    I am starting with a Cuban coffee and a sit in my hammock I am tired to the BONE!!!

                    ..dinner tonight will be prepared by someone who I pay to cook for me!!!!

                      Tonight we are going out for dinner, but tomorrow, we are going to have a rib steak. Last week our grocery store had prime rib roast on sale. I bought 2 and I just cut the bone off (put in the freezer for later) and cut the roast into steaks and tie with string. We will probably have sauteed portobellos and some other veg.

                      The bacon shrimp sounds really good, DH would love it. There is a fish restaurant in St. Catharines that does something similar, only they use a cajun spice and wrap in bacon then grill.

                        I'm making mushroom stuffing tonight to go with a couple of juicy steaks. I cook finely chopped mushrooms with green onions in olive oil. Then I add red wine and cook till the wine evaporates, and then I stir in whatever spices I wanna use (usually thyme and salt and pepper). I love this stuff. Stuffing was one of my favorite side dishes pre-Atkins, and rather than just try to use lc-bread (wrong rung) or cauliflower like a lot of recipes I've seen, I just like making something kinda different. DH makes a really good stuffing from pine nuts and shrimp too that we have over tilapia sometimes.
                        No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

                          OK this is HUGE for me ..I am cooking hamburgers by myself today ..for as many foods as I cook and as much time in the kitchen as I love to spend ..this is not something I have ever actually done and had to beg a darling friend of mine to tell me what he does when he makes his...

                          so I did what he said and I stuffed them full of cheese when I made the patties this morning and will grill them to perfection per his brilliant advice

                          I am bringing my coworkers home with me and nurses are brutal so I am out to impress them with my first attempt at this

                          I have no doubt these will be wonderful ..he has yet to drive me in the wrong direction

                          I was completely scarred by my dad's burgers growing up they were so dry and tastless ...we would choke trying to get them down and it is out of fear of doing that to someone else that I never make these things...
