    Oh man one of the easiest and most yummy way to eat is sandwiching food

    I know one of the biggest myths about eating this way is that we do not eat things like sandwiches!

    Personally I have eaten them since I started here ..I just did not use bread!

    I used bell peppers in all types of colors to sandwich things (I have said this before I am sure) like cream cheese and olives, egg, tuna and chicken salads all kinds of things....A giant jicama sliced thin can be rolled up or made in to two layers to sandwich fillings even melted cheese

    tell us ..how do you sandwich?

    How's this for a low carb sandwich and only 5 net carbs?



    I used this recipe for the bun:

    FLAX SANDWICH BUNS
    1/2 cup plus 1 tablespoon flax meal
    1/4 cup plus 2 tablespoons parmesan cheese
    1 1/2 teaspoons onion powder
    3/4 teaspoon baking powder
    1 1/2 teaspoon granular Splenda
    1/2-1 teaspoon caraway seeds, optional
    1 1/2 teaspoons dry minced onion
    3 eggs
    1 1/2 tablespoons water
    1 1/2 tablespoons oil

    Put the dry minced onion in a small bowl and add just enough water to moisten; let stand until softened. Mix dry ingredients; add onions, eggs, water and oil. Pour batter into 6 greased muffin top pans. Bake at 325ยบ 15-20 minutes. To serve, split buns horizontally to make two halves using a long, thin knife.

    Makes 6 servings
    Can be frozen

    Per Serving: 140 Calories; 11g Fat; 8g Protein; 5g Carbohydrate; 3g Dietary Fiber; 2g Net Carbs

    Those buns are also great in this sandwich:

    PASTRAMI OR CORNED BEEF SANDWICH
    2 thin Flax Sandwich Buns or one thicker one sliced in half
    1 ounce Swiss cheese, sliced
    1 ounce pastrami, sliced thin
    1 small scoop My Favorite Coleslaw

    Top bottom half of bun with Swiss cheese then the pastrami or corned beef and scoop of coleslaw.

    Makes 1 serving

    Per Serving: 292 Calories; 25g Fat; 13g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs

      I like lettuce wraps. A big leaf of lettuce, diced chicken, mayo, avocado, bacon, onion and chopped tomato rolled up makes a great sandwich.

      I'll have to do a pepper sandwich. I love red, yellow, and orange bell peppers. Not such a big fan of green pepper though.

        I use flax buns with deli meat. Or.....thin, deli-sliced slices of swiss cheese with roast beef & mustard in between. Mmmmmmmmmmmmm.

          great ideas...

          lord knows I have tried with the flax ..as nice as it looks ..I will have to say ..I don't get how people eat it...but then I eat a lot of things people "don't get"

            I've done thin sloced cheese as the outside layers, also the peppers, very yummy.

              I like to make the cheese taco shells and fill them with whatever I want, like chicken or tuna salad and lettcue and tomato. Not technically a "sandwich" but they'll hold any sandwich stuffings you want to put in them! And you can make them in any flavor cheese you like!

                    WhenI eat traditional sandwich foods (buffalo burgers, BLTs) I use a lettuce leaf as a wrap. Cram one or more leaves full of goodies and make a mess as the juices run down my arm LOL. Lunch meats get eaten rolled up ontheir own.

                      I make Atkins Revolution Rolls and use them as sandwich bread or hamburger buns. Since I made it to Grains in OWL, I found that wheat makes my nose run and my asthma act up, so I still eat those Revolution Rolls. Plus each roll is roughly 1 net carbs. The Revolution Rolls hold up well too when travelling. So I pack sandwiches for day trips and other excursions.

                      I also found rye crackers that I can eat without any problems. So I make cheese and fruit sandwiches with them, sometimes.

                      And of course, I still do the lettuce leaf roll-ups. I also found other leafy greens, like Swiss Chard make nice roll-ups.

                        hmmmmm I never thought of chard it is a beautiful veggie imagine all the colors of roll uped sandwiches on a platter ..that is an awesome idea ..SCORE!!!!!

                          Heidi, I second you on those flax buns. Pure grossness! Can only handle the flax when mixed with whey protein.

                          I sammich using lettuce, cheese, and occasionally (and by far my favourite) the low carb quesadillas. I think I'm going to try some tuna salad tonight sammiched with those cheese shells of Mog's tonight, tho!

                            flax is so awful tasting to me I have tried so hard to get beyond it and see what people like about it ..but I can't it is just horrible flavored to me ..
