    Barb yeah you and I are tight on all levels but our cooking styles are for sure at polar ends of the spectrum...however with something like this where we are all diving it ...it would be a dream come true!!!!

      Cook???

      The antipasto can be thrown together without cooking a thing. Get really good quality cured meats and fish (if you want cured fish---I can't remember which book has a recipe for making your own high quality tuna in olive oil), good quality cheeses, good quality olives and an assortment of fresh veggies and marinated veggies. If you want to do more work than arranging food on platters, I guess you can wrap proscuitto slices around honeydew wedges or make mini herb frittatas.

      Ditto with the dessert course---fresh/dried fruit and mild cheeses. Tiramisu doesn't require any baking, unless you want to bake your own lady fingers (and if you don't like the packaged lady fingers, buy a good quality sponge cake, slice it into "fingers" and dry them out in a low oven).

      But if you are planning a pasta course, you'd want your time to be spent making the pasta at the last minute, unless you do a pasta or rice salad as the pasta course.

      For the meat and veg course, roast or grill something. And serve with lots of veggies on the side.

        OK so I spoke with Kelda this morning and she PROMISED that I would have the EXACT date by the end of today as of now I have the JUNE!!!! Whoooo hooo one of the last two weeks.. I have no work scheduled during that time so it is perfect ...I am beside myself!!!!!


        I told her I would give her list of options for the menu (but then I am doing what I want!!!!)...I know this is not about me but I am centered around this food and want to do something that the family and friends will be talking about for years!!!!


        Megs awesome suggestions I am printing off these ideas as they come ...

        I am so bummed that she can not help me shop for this stuff...this daughter is the "keeper of the recipes" for the family ....

        OMG you guys I am so ...soo ...sooo.............a mom

            This is soooo exciting! And I hate to get off topic, but that means you'll have to find a dress! Hmmmmm ... I'm just don't think your ordinary frumpy Mom-of-the-bride dress is fit for our Heidi.

              LOOOOVE how you slipped that one in girlie actually get this ..we are dressing in matching outfits ..my son my niece and Barb if she can figure out how to come ..we are getting chefs pants, tops and hats that match....

                      OMG the REAL kind ...I just added it to the list ..I can make them if I can find some good ones...

                      the one thing about this menu is S Italian can not be tooo planned because a lot of the stuff is fresh fresh..I am taking Megs idea of a lot of cold or room temp foods because this is going to be Dallas in June so I have to consider comfort!!!!

                      I serve eggplant parm at room temp so I can make pans of it heat it early then let it sit no problem ..

                      I am thinking of the main course as chicken picatta or marsala because chicken is not iffy with people ...

                      I have to have a seafood course and Texas has those most amazing Gulf Prawns or shrimp so scampi will probably happen....

                      but lots of cold platters for sure..

                      I would love to do a tiramisu instead of a cake but no answer on that yet..I am lucky I have the date!!!

                        Tiramisu is basically lady fingers soaked in coffee or espresso, layered in a pan with mascarpone cheese sandwiched between the layers.

                        I'm thinking if you want to do a lower carb version of it. Borrow the recipe for biscotti from the atkins.com or any other low carb site and use them in place of the lady fingers. And of course, use sweetener in the mascarpone-custard mixture.

                              hey let me fill you in on the latest and anyone who has kids that make them mental cases will understand!!!
                              so here we are literally ready to buy the tickets online ..credit card in hand ...flight car and hotel reserved ...then Kelda calls and says "wait don't buy the tickets we are moving the wedding to Providence!!!!"

                              we are down to four weeks now btw

                              I am trying really hard not to want to smack them upside the head you know

                              It is ok at least I will be in the best place (Providence is where I grew up and still my "home") so I know where to buy everything and do not have to ship or plan ahead on anything ..but honestly ..I am buying my tickets today if she does change this again .....my poor husband does not do well with all these changes and is having a breakdown!
