    They are coming in here like crazy now big fat spears of yummy asparagus from Eastern Washington...I love to have my first bite of locally grown aspargaus ..raw and right there when I buy them at the farmers market ...yummmmm ..sometimes I will bite all those tips off and have to go nd buy another pound if I planned on cooking them because all I have is the stalks in a bag with no tips!!!

    however it is so worth it to take them home steam them just enough and then top them with Hollandaise ...yummmmmmmmm


    here is Tyler Florence recipe from foodtv.com

    this is a predictable good recipe that always turns out well
    and is very low carb
    4 egg yolks
    1 tablespoon freshly squeezed lemon juice
    1/2 cup unsalted butter, melted (1 stick)
    Pinch cayenne
    Pinch salt


    Vigorously whisk the egg yolks and lemon juice together in a stainless steel bowl and until the mixture is thickened and doubled in volume. Place the bowl over a saucepan containing barely simmering water (or use a double boiler,) the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume. Remove from heat, whisk in cayenne and salt. Cover and place in a warm spot until ready to use for the eggs benedict. If the sauce gets too thick, whisk in a few drops of warm water before serving.

    I love it roasted!! Last night I took cabbage and asparagus (seperatly), wrapped it in bacon, then put it in my small roaster. So very very good!! I cut the cabbage in quarter, and I put the asparagus in 8 stalk bunches. I always do enough for leftovers. I also love it steamed with butter on top.
    What would we do without it?

      Hollandaise sauce is heaven!

      I also like asparagus roasted: just sprinkle with alittle olive oil, throw into a very hot oven and roast until slightly browned. Then remove from oven and toss with freshly ground black pepper and Parmesan cheese. Yummy yummy!

        Asparagus is probably one of our favorite vegetables here. We love them roasted with Olive Oil the best. We eat it at least every other week if not once a week.

              I have a great way to fix asparagus that's low carb.

              Heat 2T olive oil in a skillet.
              Saute 2 green onions, 8 oz of sliced fresh mushrooms, and garlic in the olive oil for a few minutes until the mushrooms are limp.
              Add 1 lb asparagus cut into one-inch pieces and 1/2 cup chicken broth. Cook for 10 minutes. Asparagus will be crisp tender.
              Sprinkle with 1/4 cup parmesan cheese and serve.

              My family loves this, and they used to be sold on asparagus in cheese sauce!

                  Im also a lover of asparagus roasted in olive oil with sea salt and fresh cracked pepper. Im going to have to try the wrapped in bacon version!! The stuff I can tfindint he stores here isnt usually kept properly so a good bit of stalk has to be clipped off and discarded. Im hoping and praying that with the farmers market starting soon, Ill be able to find some GOOD stuff. (when I get desperate enough in the winter, Ill eatit canned just so I can have the taste of it!)
